Banyan Tree Samui Reveals Christmas & New Year Programme

Banyan Tree Samui, an all-pool-villa beachfront resort in Koh Samui and a recent recipient of major international awards, has unveiled a series of special gourmet feasts and dazzling celebrations to celebrate the upcoming festive season.

Recently awarded Two Keys by MICHELIN and lauded as among the Top 10 resorts in Thailand by Conde Nast Traveler, the 5-star hotel will this year mark Christmas with a series of sumptuous dining experiences at each of its three restaurants on Dec. 24 and 25, culminating in a culinary extravaganza and a kaleidoscope of fireworks and fun on New Year’s Eve.

The tropical island Christmas kicks off at The Edge, situated at a venue that commands spectacular vistas across the sapphire seas of the Gulf of Thailand. Its Christmas Eve Gala Dinner 2025 features a variety of international culinary delights — an oyster bar, seafood market, a carving station and salad bar — accompanied by live music from 7pm.

Meanwhile, a culinary journey is underway at Saffron, where, each evening from Dec. 24 - 26, a 5-course set menu will be presented in a sophisticated and tranquil setting. Saffron is a fine-dining venue recognised by the prestigious MICHELIN Guide in its restaurant recommendations for 2025, and it specializes in contemporary Thai cuisine.

Of course, it wouldn’t be Christmas in Thailand without a crescent of white sand under the palm trees with sea breezes and candlelight. At Beachside, fine delicacies such as slow-roasted butterball turkey, Alaskan snowfish and grilled tiger prawns are on the menu with a 3-course set lunch and 5-course set dinner prepared by Chef Rainer and his culinary team from Dec 24 - 26.

Beachside also plays host to a beachfront Christmas Day of fun and festivity starting at 7pm on Dec. 25. Everything from traditional Christmas dishes to a selection of land and sea delicacies is available, prepared to perfection at live cooking stations. A fire-twirling show and live entertainment will round off what promises to be an unforgettable evening.

To mark the final night of 2025, The Edge will play host to a New Year’s Eve Gala Dinner from 7pm, offering a magnificent buffet that features a “Treasure of Seafood on Ice” — including tiger prawns, mussels, oysters, octopus, lobster, caviar, sushi and sashimi -— as well as French foie gras, a carving station, sorbets, and much more, all accompanied by live entertainment.

Saffron will host a 5-course Thai dinner which is to include mouthwatering favourites such as spicy salmon rolls, Wagyu beef salad in herbs and spices, Champagne sorbets, roasted lamb chops, and a selection of delicate desserts.

Dec. 31 reaches its climax with a “Banyan Fairytale Party Night” at the beachfront from 10pm to 1am with a countdown party, Champagne, dancing, live entertainment and a bouquet of fireworks to ring in the New Year with style.

Banyan Tree Samui Rolls Out Sustainable Food Initiatives

While guests at the 5-star resort of Banyan Tree Samui enjoy exquisite dining and fine wines at its award-winning signature restaurant, Saffron, they may yet be unaware of the current of care that flows beneath the surface, ensuring that maximum effort is made to prepare all dishes using ingredients sourced through the most rigorous sustainability guidelines.

Several years back, Banyan Tree Samui was recognised as a flagship of sustainability and eco-friendliness in Thailand when it was awarded the highest level of certification by global watchdog EarthCheck, the first hotel in the country to achieve this award.

And in 2024, the luxury resort — often better known for its pool villas with infinity pools and spectacular views — announced a series of initiatives that keep the sustainability ball moving forward.

Cage-Free Eggs

In January 2024, just 2.75 percent of all eggs purchased by Banyan Tree Samui were classified as “cage-free”, indicating that they were sourced from free-range farms, as opposed to caged chickens. By May this year, that figure had leapt to more than two-thirds of the 17,402 eggs bought. Eggs from hens remain the most popular item in this category while the sourcing of cage-free quail eggs and duck eggs remains “a work in progress”, said Chef Rainer Roersch, the hotel’s Director of F&B and Cuisine.

Sustainable Seafood

Thailand’s fishing industry has undergone a radical rethink since it was issued a “yellow card” by the European Union in 2015, a warning that sanctions could be applied if the country did not sufficiently tackle illegal and unregulated fishing. To protect biodiversity and support a sustainable supply chain, Banyan Tree Samui has now introduced a policy to purchase only sustainable seafood that is certified by the Marine Stewardship Council and Aquaculture Sustainability Council. Both these standards are monitored by Bureau Veritas, the recognised world leader in testing, inspection and certification services.

While almost all seafood and fish are purchased locally on the tropical island, Banyan Tree Samui imports items such as salmon and snow fish. All 100 kilogrammes of salmon purchased on a monthly basis meet the requirements of the international agencies overseeing sustainable seafood practices.

Coffee Granules & Capsules

Guests at a 5-star hotel like Banyan Tree Samui expect nothing but the best, and the same goes for having a modern coffee machine in their rooms. All 88 pool villas at the resort are equipped with Nespresso machines, which means that housekeepers are constantly refilling and disposing of thousands of coffee capsules and the used granules. In collaboration with Nespresso, in October 2023 Banyan Tree Samui began recycling and upcycling the discarded coffee capsules. The aluminium is upcycled into everyday products such as bicycles, chairs, pens and window frames, as well as recycled coffee capsules. As for the coffee grains, they are recycled as compost fertiliser and renewable energy such as biofuel.

Banyan Global Foundation

In addition to ongoing “plastic-free” initiatives — phasing out the use of plastic bottles, straws, cutlery and garbage bags, for example— and providing its food waste to a local pig farm, this eco-friendly hotel is also involved in a plethora of local community projects on Koh Samui. It has provided scholarships to local children; funded the reconstruction of a nearby school damaged by a storm; held annual blood drives; and, during the pandemic, offered complimentary one-night stays to all local health workers. Much of the finance for these benevolent programmes comes from the Banyan Tree Global Foundation.

The Banyan Group has a longstanding commitment to sustainable practices, including numerous projects around the world concerning: waste management; water conservation; biodiversity; and a Climate Change project focused on green energy and waste-to-energy projects.

In 2019, the Banyan Tree Group (now the Banyan Group) implemented a Code of Conduct for suppliers to map a transparent supply chain for all its ingredients, and to promote socio-environmental practice. To date, more than 900 suppliers have registered worldwide.

Banyan Tree — New Markets and Growth

The flagship brand, Banyan Tree, is leading with a record number of five openings in one year. A significant milestone is the debut of Banyan Tree in Japan with Banyan Tree Higashiyama Kyoto opening in August 2024. The intimate 52-room hotel is enveloped by a bamboo forest, designed to evoke harmony with the sense of place.

Garrya — Fastest-Growing Brand

Since its launch in 2021, Garrya has become Banyan Group’s fastest-growing brand, adding three new properties in 2024: Garrya Xianju and Garrya Yangcheng Lake in China, and Garrya Mù Cang Chải in Vietnam. The latter, opening in August 2024, will be characterised by an ecologically sensitive design and is the largest bamboo architecture in Vietnam, combining cultural Vietnamese symbolism with contemporary design.

Homm, Angsana, Cassia — Expanding Footprint

Banyan Group’s Homm has nearly doubled its footprint in 2024 with six new openings, including Homm Stay Nagi Shijo Kyoto, Homm Stay Nagi Sanjo Kyoto, and Homm Stay Nagi Arashiyama Kyoto in Japan as well as Homm Marina Sokcho in South Korea. Homm Zhuhai Hengqin and Homm Changchun Beihu in China will open later this year.

Newly-opening Luxury Hotels in Kyoto

On 23 April 2024, the Six Senses Kyoto opened its first hotel in Japan with unique features that embody the fusion and harmony between well-being, sustainability and Kyoto’s local culture, including the Earth Lab where you can discover their sustainable initiatives and the Alchemy Bar that offers cosmetics-making workshops using natural materials.

On 29 March 2024, the DoubleTree by Hilton Kyoto Station opened with a full range of facilities, including an executive lounge, fitness center and meeting rooms.

Also, the Banyan Tree Higashiyama Kyoto is scheduled to open in Q3 2024.
It will be the first hotel in Kyoto to boast a noh stage on the premises, and the first international brand hotel in the Gion/Higashiyama area to offer rooms with natural hot spring baths.

MICHELIN-listed Restaurant in Koh Samui appoints New Sous Chef

Banyan Tree Samui has announced the appointment of a new sous chef, Mr Kitja Muakin, at its signature Thai restaurant, Saffron, a move complemented by the news that the fine-dining venue has been recognised in the 2024 MICHELIN Guide for Thailand.

Kitja, known affectionately as Chef Bobby, joins the team at Saffron, after working his way through the ranks at Banyan Tree, where he began his career in Phuket in 2012 after graduating in Kitchen and Restaurant Management at Dusit Thani College in Bangkok.

He worked as commis and demi-chef at Banyan Tree Bangkok and Banyan Tree Macau, respectively, before transferring his skills to Banyan Tree Krabi for the opening of its own Saffron restaurant in 2020.

Banyan Tree Krabi Achieves Sustainability Badge of Honour

Banyan Tree Krabi has been recognised for its sustainable and environmental practices, becoming the first hotel or resort in the Krabi region to win Silver Certification by EarthCheck, the world’s leading scientific benchmarking organisation for the hospitality industry.

Following a rigorous science-backed audit by EarthCheck, the landmark accolade is underpinned by the resort’s excellence in 10 key performance areas: Greenhouse Gas Emissions; Energy Efficiency; Management of Freshwater Resources; Ecosystem Conservation & Management; Social & Cultural Management; Land Use Planning & Management; Air Quality Protection; Wastewater Management; Solid Waste Management; and Environmentally Harmful Substances.

“EarthCheck requires all its members to meet every single criterion, every year,” said the organisation’s Relationship Manager Bingni Wu. “This means businesses must continuously work on both the measurable and qualitative aspects of sustainability. It's not just about ticking boxes; it's about making real, ongoing changes.”

Sustainability as a Key to Success

Head of Banyan Tree Krabi’s Sustainability Team, Thepsuda Loyjiw, said that the resort continually strives to reduce consumption rates through improved efficiency and adopting new technology or practices.

A marine biologist, Loyjiw said that the hotel offers eco-friendly activities to guests, including forest bathing and hiking in the national park adjoining the property to help raise awareness about environmental conservation and protecting local flora and fauna.

Among the cultural options, guests can indulge in Thai cookery classes, Thai boxing, Thai language lessons or a visit to an elephant sanctuary.

The hotel also organises beach clean-up campaigns, and — as part of the Banyan Tree brand’s worldwide “Stay For Good” initiative — tours to a local fishing community where guests can participate in handcraft workshops.

Among projects earmarked for the year ahead, Loyjiw said her team is preparing the groundwork for a cage-free egg policy at the hotel, as well as a sustainable seafood programme.

Award-Winning Resorts

Located on secluded Tubkaek Beach and opened in 2020, Banyan Tree Krabi is flanked to the rear by a forested national park while facing out towards a sea of karst limestone towers — undoubtedly one of Thailand’s most iconic and enduring images — which are uninhabited and protected as a national marine park. The hotel is tiered into a lush landscape, all of which is dominated by a rollercoaster of mountains.

The resort offers 72 pool suites and villas, among them seven two-bedroom options, one three-bedroom villa, and a majestic seven-bedroom beachfront Presidential Villa. Each of the rooms faces the sea and the sunset as the property tiers into the hillside.

Meliá Chiang Mai takes guests onto a 250-acre gourmet organic farm to meet farmers and learn more about sustainable farming and healthy eating. Under the hotel’s 360° Cuisine programme, its kitchen works closely with SEED Sustainable Farm in San Sai District, sourcing ‘farm to plate’ organic produce that travels only a short distance before ‘plate to farm’ food waste returns to the farm as fertilizer. Participants have the chance to feed the animals, walk through the farm with a guide to learn about the cultivation of Meliá Chiang Mai’s fruits, vegetables and herbs as well as SEED’s Pharm traditional herbal medicine garden, and rummage through a garden maze.

Banyan Tree Group Announces a Shift of its Name to Banyan Group and Unveils Robust Pipeline of 19 Properties to Debut in 2024

Celebrating three decades of creating exceptional experiences across hotels, spas, residences, food and retail, Banyan Tree Group is evolving its corporate umbrella brand from “Banyan Tree Group” to “Banyan Group”. This brand shift reflects the Group's evolution into a dynamic, multi-brand hospitality powerhouse.

Since 2019, the Group has doubled its brand portfolio, bringing its pioneering spirit, design-led experiences, and purpose driven mission to new destinations, including Banyan Tree AlUla in Saudi Arabia, Garrya in Kyoto, and Folio in Osaka, Japan, Dhawa in Ho Tram, Vietnam, Homm in Huzhou, China and Banyan Tree Dubai in the United Arab Emirates. 2023 also marks a year of strong and steady business performance that has surpassed pre-pandemic levels.

Multi-brand Growth Continues in 2024 With 19 New Openings

“As we celebrate the Group’s 30th anniversary and its evolution into Banyan Group, this milestone is not only testament to the Group’s enduring success in the hospitality industry but also sets the stage for an exciting future,” said Eddy See, President and CEO of Banyan Group. “This brand evolution reflects our portfolio transformation from a single luxury brand to the diverse offering we have today. Almost half of all the countries we operate in carry a multi-branded presence, with most of them being high-growth travel destinations. With a keen eye on expansion, we are seizing new opportunities with our distinct brands, designed to meet evolving traveller preferences and needs in these dynamic markets.”

Banyan Group currently manages 12 global brands, 75 hotels and resorts, over 60 spas and galleries and 14 branded residences across 22 countries. As part of a robust pipeline of properties, the Group’s expansion in 2024 will include 19 new properties and residences in Cambodia, China, Japan, South Korea, Vietnam and Mexico. Here are the highlights: 
  • The Group’s first property in Cambodia will debut with Angsana Siem Reap
  • The first Banyan Tree property in Japan, Banyan Tree Higashiyama Kyoto
  • Further enhancing Banyan Group’s multi-brand presence, additional brands are set to debut in Vietnam – Angsana Quan Lan in Halong Bay and Garrya Mu Chang Chai, as well as in South Korea with Cassia and Homm Sokcho.
  • Suzhou, approximately 2 hours away from Shanghai by train or car, will feature two complexes – The first, in Shishan, will include Banyan Tree and Angsana, while the second, by Yangcheng Lake, will include Banyan Tree and Garrya
  • Angsana Tengchong marks the Group's fifth property in the Yunnan province of China
  • In North America, Banyan Tree Veya Valle de Guadalupe marks the debut of the first full-fledged Banyan Tree Veya in Mexico

Record-Breaking Business Performance in 2023

The robust growth slated for 2024 has been driven by a resilient recovery post-Covid, surpassing pre-pandemic metrics across various regional markets. Key 2023 metrics include: 
  • Hotels achieved higher RevPAR, up by 44%, in 9M2023 compared to 9M2022, and also surpassed the pre-pandemic performance by 27% as opposed to 9M2019, on a same store-store basis.
  • Residence sales for 9M2023 reached 90% of the full-year sales in 2022, which was the best year on record.
  • China has proven to be a strategic driver, with a remarkable +49% increase in RevPAR 9M2023 compared to the same period last year, and +18% increase in RevPAR compared to pre-Covid level in 2019 on a same-store basis. The operating footprint has expanded from 16 in 2019 to 25 properties in 2023, with 14 more in the three-year pipeline. Continued growth is anticipated, driven by a healthy opening pipeline and the strength of the domestic and outbound Chinese market in both residences and hospitality
  • The recent buyback deal with China Vanke further strengthens the Group’s position as a key player in the hospitality industry by streamlining strategic decision-making in response to market dynamics and enhancing day-to-day operational efficiency.

New Sustainability Commitments and Deepened Differentiation

Simultaneously, the company has maintained its pioneering spirit and commitment to both design-led experiences and a purpose-driven mission of stewardship and responsible tourism, making it a trailblazer for inclusive growth and sustainability.

In 2024, Banyan Group will align with United Nations Climate Science-based Targets to develop a comprehensive 2030 Sustainability Roadmap that addresses both environmental and human capital development in line with its founding ethos of Embracing the Environment, Empowering People. It will also pioneer a circularity pilot project, reinforcing the brand’s commitment to advance the hospitality industry’s transition to regenerative practices.

The Group will also launch Laguna Lakelands in Phuket, its most ambitious nature-integrated development. Spanning 110 hectares, Laguna Lakelands will encompass a Rainforest park, over 10km of treetop skywalks, and six distinct zones—orchard, lakeside, lagoon, valley, and forest—ushering in a new era of immersive living.

New Programming and Initiatives

During its 30th anniversary in 2024, Banyan Group will launch Beyond, a new digital companion that offers a holistic experience across its codified wellbeing framework, and withBanyan, an experiential members programme that rewards engagement, interactions and actions. The celebration extends globally with 11 trade pop-ups, engaging global consumer campaigns, the launch of 8 signature scents inspired by the Group's eight pillars of wellbeing and limited edition artisanal anniversary gifts, all crafted in collaboration with the communities where the Group operates.
