What's New in the Heritage City This February

Spicers opens new restaurant
Rising from the ashes and taking inspiration from world's best restaurants, the Homestead opens its doors in time for Valentine's Day….

Guests and diners will have their first look at the highly anticipated 'new homestead' at Spicers Hidden Vale on February 14. The beautiful bespoke building embraces the history of the site with a timeless yet thoroughly contemporary ambience… a legacy for future generations.

The homestead, with Homage Restaurant at its heart, was rebuilt following a fire that destroyed the previous building almost two years ago. Notice we didn't say 'original' building – that's because the actual first-built homestead was destroyed by another fire 99 years earlier. Framed prints of these two previous buildings can be viewed in the new homestead. Since the fire, Homage, the highly awarded and hatted restaurant (two hats in the 2020 Australian Good Food Guilde) has operated from a century-old barn on the property. Here, Executive Chef Ash Martin and his team have embraced a 'cooking with fire' concept – initially out of necessity because their ovens were destroyed – and this has become a key theme of the menu.

The new kitchen includes an imported Mibrasa grill, fuelled by coals from local Mulgowie pruned olive trees that continue to weave the fiery edge into Chef Martin's thought-provoking creations.

Although favourite dishes will remain on market-garden-driven menu, expect to be tempted by a collection of new dishes inspired by the property, region and season – Beef fat crumpet, caramelized honey, pickled scallions, wood roasted marrow (with honey from Homage's own bee hives); or Red Claw yabbies, smoked yolk, orchard citrus (locally farmed yabbies, with oranges and limes from the market garden, and eggs from Hidden Vale's own heritage breed hens); or Coal roasted suckling pig, stone fruit aged over olive wood charcoal (with piglets from Goombungee's ethical 5th generation Schultz Family Farms) and many other…

Jaffna – Home cooking with Vinesh’s mother-in-law

For quite some time now the internet has been abuzz with tales of Jaffna being a place with unique culinary experiences, full of sumptuous local cuisine that are a highlight while visiting Sri Lanka. We can tell you that it’s true!

Though finding authentic Jaffna cooking outside of high-end restaurants is not an easy task and it is actually best experienced in a home. We’re very lucky that one of our Tour Executives, Vinesh, from Jaffna, has a mother-in-law who is renown for making the best signature dish of Sri Lankan Crab curry – truly a succulent & mouth-watering treat.

True foodies are not only able to indulge in delicious home cooking, they are also able to spend time with Vinesh’s mother-in-law (pictured) learning how to make the famous dish as well as many regional accompaniments such as brinjal paal curry, a Tamil influenced dish of eggplant. Help grind the coconut and create an amazing rich & deep paste that you’ll be wanting to replicate back home. We invite guests to make a morning of it and join for a walk around the local markets for fresh produce and also visiting a fish market to check out this morning’s catch. Learn about the variety of seafood, vegetables, herbs and spices (many that you may not be familiar with) and feel free to choose any that take your fancy to prepare for today’s lunch. It’s also great to indulge in some of the local brew, coconut arrack.

We believe there’s no better way to connect with locals than through food and this culinary experience certainly reflects the warmth and hospitality of down-to-earth & welcoming Jaffna.

Jaffna itself has long been considered off the beaten track and can easily be reached at the beginning of your journey by taking a domestic flight from Colombo Ratmalana airport (only available on Monday, Wednesday and Friday).

Aside from the food, Jaffna has a lot to offer and is steeped in Hindu tradition, art & culture. The Jaffna Fort, in Guru Nagar, is handy to the main fish market, and is an imposing site built by the Portuguese after their invasion in 1618 (they first invaded in 1560) and is just as impressive as the Galle Fort in the South, only far few visitors! We’d also recommend a day trip to the intriguing island of Neduntivu (popularly known as Delft) and there’s no better way to do this than by getting your own private fishing boat to have the flexibility to go around the various islands, including Nainativu, home to the Hindu shrine of the Nagapooshani Amman Temple.

Eating Your Way Through Japan

With the global spotlight on Japan ahead of the Tokyo 2020 Olympics, there is a whole world of cuisine and etiquette to uncover. Japanese cuisine encompasses the regional and traditional foods of Japan, the recipes being refined and shaped over centuries of political, economic, and social changes. Although the traditional cuisine of Japan washoku (Japanese eating) is based on rice with miso soup with an emphasis on seasonal ingredients, Japanese cooking has fused into a global favourite.

Eccentric and eclectic Japanese foods and where to try them
Despite the conservative culture, Japan is home to some quirky trends (and the island of rabbits in Japan’s Inland Sea).

· Wild blowfish: Wild Caught ‘Tora-Fugu’ (Tiger-Blowfish) farmed in Usuki Oita, and served at Unkai at ANA InterContinental-Tokyo with Kyoto miso soup, blowfish sashimi, deep-friend blowfish, ‘Tecchiri’ blowfish hot pot, rice porridge and dessert. Guests interested in this dish need to request the dish prior to reservation

· Tomato Sauce flavoured Flat Lemon: at Teppanyaki TAKUMI at InterContinental Tokyo Bay the Takumi Supremacy Dinner offers grilled Japanese Lobster and tomato sauce flavoured flat lemon with bitter gourd chips.

Japan’s best hotel restaurants, with Michelin-Stars to prove it
Earning a Michelin Star is no easy task, it means consistently creating innovative food, providing the highest standards of service, and being truly passionate about the guest experience. These restaurants exemplify the best:

· Positioned on the 20th floor overlooking Osaka city, Pierre is InterContinental Osaka’s signature restaurant. Serving seasonal ingredients prepared with elements of Japanese and French techniques, highly skilled Pierre kitchen team led by Chef de Cuisine Susumu Okubo creates a memorable dining experience producing original dishes that are striking to the eye. Using creativity to combine Japanese ingredients with French cooking techniques. Creating menus which are intrinsically seasonal yet executed with the accuracy of modern French cuisine.

· ANA InterContinental Tokyo is home to three Michelin starred Chef Pierre Gagnaire’s highest restaurant in the world. Discover his award winning contemporary French cuisine in elegant surrounds with the stunning Tokyo metropolis and Tokyo Tower as a backdrop. Experience a unique culinary journey of passionate dedication to the best quality produce and the creation of unprecedented tastes that reflect this world-renowned chef’s philosophy of using food to communicate and incite emotion.

Chef Pierre’s signature is to serve multiple dishes within each course and he has introduced his new menu, inspired by Japanese “KAISEKI style”; where guests can choose from a multitude of intricately prepared dishes, each expressing their own story and flavour. In 2015, after a poll of over 500 Michelin-starred chefs from around the world, Chef Gagnaire was named 'best chef' by France's authoritative 'Le Chef' magazine.

· Maison Tateru Yoshino is the award-winning French restaurant nestled on the second floor of ANA Crowne Plaza Osaka. Its "white balance" theme is designed to accentuate fine elegance, combining elegant cream white and gold walls, gentle curved surfaces, glass screens surrounding individual circular booth seats, and soft carpets with discreet patterns based on the huge coral reefs and flowers that are found in Tateru Yoshino’s native Kikai Island. The restaurant embraces tradition, culture and nostalgic new cuisine, quickly winning guests’ hearts and stomachs.

Top sushi joints in Japan (that you don’t need to leave your hotel to visit)
· Overlooking the manicured perfection of a traditional garden and pond designed to highlight each season’s beauty, Unkai at ANA InterContinental Tokyo showcases seasonal specialties and the essence of Japanese cuisine. For an unforgettable experience, private tatami dining rooms offer refined surrounds in which to savour traditional cuisine such as the famous Kaiseki degustation meal. The restaurant offers Unkai Experience - A Taste of Japan to give guests an authentic dining course including sashimi, tempura and steak.

· Try the Kaiseki (traditional multi-course Japanese meal) at Wake-tokuyama at InterContinental Tokyo Bay. Wake-tokuyama provides cordial hospitality and dishes from Chef Hiromitsu Nozaki, Executive Chef since 1989, that are based on traditional Japanese techniques but are also creative and unconventional.

Olympics leaving you craving a taste of Japan (without the cost of a flight)?
· Come in to experience Shiki’s award-winning authentic Japanese cuisine in the heart of our very own Adelaide. Observe the skill and talent of Chef de Cuisine, Kenny Trinh, as he and his team create delicious and succulent dishes through their culinary mastery. Shiki’s professional chefs and world-class service offer an incredible and unique experience to remember for all guests, combining seasonal produce with amazing Japanese sushi and sashimi, tempura and teppanyaki.

Featured Experience Mekong Collection Member - Haoma

Haoma
Haoma is Thailand’s first urban farm and zero-waste restaurant in the heart of Bangkok. Guided by our philosophy “Grow to Give Back,” everything we do is aimed at regenerating our ecosystem, food and community. Local, ethical and sustainable ingredients are our foundation. We only use ingredients when we know where they come from. Most of them are grown on our organic farm in Chiang Mai. Some of them are grown locally at our restaurant.

Deepanker Khosla, affectionately known as “DK”, is as passionate about reimagining authentic Classic Indian cuisine which he likes to call Neo Indian, as he is for achieving food sustainability.

Deepanker Khosla
Haoma is a dream-come-true project that began with an online course in Aquaponics and just a year later had bloomed into a full-blown, functioning urban farm in the heart of Bangkok. But it was a year of toiling in the earth, coaxing fish to grow in new waters and of experimenting through many trials and errors to optimize flavors – all the while working to create a food system that can truly be called sustainable.

DK`s commitment to the environment is contagious and so is his drive and passion to deliver excellent cuisine at Haoma Bangkok.

The Superb Sydney Coliseum Theatre Opens in Western Sydney

"Christmas at the Coliseum Concert"
The brand new Sydney Coliseum Theatre has now officially opened with an exciting line up of shows in its first few weeks of operation. The biggest stars have come out to perform on Sydneys newest stage in the new 2,000 seat multi-mode theatre.

I was privileged to be part of the capacity audience on Opening Night to hear David Campbell and the Sydney Symphony Orchestra. This was a special "Christmas at the Coliseum Concert" with lots of well known, and some lesser-known, Christmas carols and songs.

The sound reproduction on the huge speakers above the stage made the Christmas songs and music very easy to listen to. The sound quality o the 65 speaker system was excellent on the quieter ballad style songs and the heavier rock style songs.

The lighting on the stage, walls and ceiling of the theatre went all out to make the theatre look very Christmasy.

"Christmas at the Coliseum Concert"
Other shows at the Sydney Coliseum leading up to Christmas include the amazing country singer, songwriter and musician Kieth Urban in Concert, ARIA-award winning Tina Arena in Concert, world-famous Dame Edna Everage in My Gorgeous Life, acclaimed John Butler in Concert, the Wolfgang's Magical Musical Circus and the Australia Ballet's production of Storytime Ballet.

The Grand Opening Concert held on Saturday 21 December featured the star-studded line-up of Kieth Urban, Amy Shark and John Butler.

The vision for a new lyric style theatre in Western Sydney was conceived in 2012. The dream of a few people has now become a glorious reality with the opening of the world-class Sydney Coliseum Theatre.

The Sydney Coliseum Theatre is part of the West HQ complex located in Western Sydney. West HQ is the new name for the Rooty Hill RSL Cub that was first established back in 1964. Today West HQ spans 8 hectares and attracts 4 million visitors each year who come for the entertainment, fitness, lifestyle and accommodation services provided.

The Sydney Coliseum Theatre is the new home for culture, arts and entertainment for people in Western Sydney. They will no longer have to travel to the Sydney CBD to see world-class singers, dancers, and performers. I hope that some of the large scale musicals will have season runs at the theatre.

The design of the Sydney Coliseum Theatre is beautiful inside and out. The outside features flowing curved walls that resemble flowing theatre curtains. The tops of the walls, featuring vertical slot windows, are also curved.

"Field of Stars" Chandelier
Entry to the Sydney Coliseum Theatre is not from street level as one would expect. Patrons have to first enter West HQ, take the escalator up to the first floor, then walk across the Crystal Bridge that joins the West HQ to the Theatre foyer above the street below. The walls of the linking bridge are glass from floor to ceiling,  and the floor has a rather amazing LED digital screen that is walked on as it displays ist colourful lights patterns and messages.

The Grand Staircase connects the three foyer levels and is curved along the exterior walls of the foyers. There is also a lift as an alternative to the stairs.

A highlight of the foyers is the large "Field of Stars" Chandelier that is suspended from the ceiling of the atrium and can be seen from all of the three foyer levels. This is not a traditional chandelier, but a modern one consisting of thousands of crystals suspended over 240 individual strands that give the appearance of a star-filled sky.

The foyers are light and airy, with a light coloured palette of walls and floors, whereas the theatre has a darker palette, featuring blackbutt timber panelling on the walls, so that the eyes are focussed on the stage.

The seats in the theatre are very comfy to sit on, and all have a good view of the stage. The seats have premium black fabric, special foam inserts, timber hand rests and brass detailing. A unique feature of them is that the 1.000 seats in the stalls section can be folded down and retracted to hide them away,  This enables the theatre to be turned into a multi-function flat-floored venue that can stage major corporate events a well as world-class artistic performances.

There are plenty of dining options at the new West HQ Eat Street dining precinct. A simple snack or a full meal can be enjoyed before or after a show at Chu China Doll Restaurant, Pizzaperta by Manfredi, New Town Thai Street Food, Gelatissimo, Eat Street Bar, Corner Cafe, Steak & Co. by Sean Connolly and Chur Burger.
Access to the Sydney Coliseum Theatre is best by car, as there are 2,000 free car parking spaces available. Unfortunately, it is not right next to the Rooty Hill Train Station. It would be good if they introduced a courtesy bus to take patrons to the station after a show to save walking in the dark.

The Sydney Coliseum Theatre is a landmark new building in Western Sydney. Make sure you put it on your list of things to do in the near future and enjoy a show in this amazing new theatre.

Chankonabe One-pot Winter Wonders at Up & Above Restaurant

Chankonabe One-pot Winter Wonders
Nabemono is a well-established Japanese culinary tradition that has been embraced by foodies the world over.

‘Nabe’ refers to a large Japanese pot in which a selection of meats, fish, seafood and vegetables are cooked together in a seasoned broth to provide a wonderful communal meal.

Often described as a winter specialty, a nabe hotpot stew can last for many hours as the heat beneath the pot is replenished and ingredients are added as desired.

One variation of Nabemono – Chankonabe – has become synonymous with Japan’s famous Sumo wrestlers, because the nutritional mix of ingredients boast the high protein levels the wrestlers need to gain the weight required to make them competitive.

Even today Chankonabe remains a favourite among Sumo practitioners, from the lowly novice to the highest-ranked Yokozuna grand champion.

This winter at Up & Above Restaurant we invite you to enjoy our healthy version of Chankonabe.

Giving a real energy boost it comprises a selection of udon noodles, chicken, king crab, prawns, sea bass, mussels, clams and vegetables in a chicken and dashi broth.

Wholesome and nourishing, it is the ideal winter meal to enjoy with family and friends.

The Chankonabe hotpot promotion is available daily from 12:00 - 22:00, 1 January - 31 March 2020. Price is Baht 650++ per pot.

Up & Above Restaurant is located on the 24th floor of The Okura Prestige Bangkok. For more information and reservations, please contact 02 687 9000 or email upandabove@okurabangkok.com, or book on our website www.okurabangkok.com

Aki-Oka Expands Anew with Four New Shops and a Hotel Opening in December 2019

Aki-Oka Artisan is a unique shopping area located underneath elevated railway tracks. It takes its name from Akihabara and Okachimachi, the two stations it is situated between. The story of this unusual spot starts with 2k540, a collection of shops, workshops, and cafes specializing in Japanese handmade goods and traditional crafts. These unadorned, simple premises resemble warehouses or factories, with a minimalism that's a world apart from glitzy modern shopping malls. Here, you can find a variety of artisanal crafts. In some places, you can even see the workshops where goods are made. Perfect for browsing around or buying a gift for yourself or a loved one, 2k540 is a great spot for craft lovers and newcomers alike. Its overwhelming success prompted several expansions, which are set to continue in December 2019 with the opening of "SEEKBASE AKI-OKA MANUFACTURE."

New in 2019
SEEKBASE AKI-OKA MANUFACTURE, the complex's latest development, is 160 square meters of space just north of Akihabara Station. Opening in December, there will be four new premises, including a distillery and an area to buy, sell, or repair electronic equipment. This fits perfectly with Akihabara's image as an electronics hub. The development also includes Aki Oka's first hotel, a 29-room facility set up in collaboration with the Ikidane chain. There's a mix of room sizes, providing suitable accommodation for everyone from single travellers to families. The hotel is themed around urban sustainability; earthy colours give relief from the bustle of the Akihabara streets. An on-site cafe-bar serves light snacks and meals—perfect to keep you going as you explore the ever-increasing number of unique shopping options.

Amazing things from Japan
Aside from 2K540 and the new developments, the Aki-Oka brand encompasses two other nearby locations. The first is Chabara Aki-Oka Marche, an indoor food market that opened in 2013. Its gives customers a chance to discover rare and hard-to-find items, such as condiments and seasonings, from all over the country. The second is Okachimachi Ramen Yokocho, a group of five restaurants each offering a different take on ramen noodles. The overarching theme for these facilities is "amazing things from Japan"— products made in a specific place, by a specific artisan. There's a direct connection between the producer and the consumer, with opportunities to ask questions and learn more about what you're buying. Nothing for sale under the Aki-Oka banner is easily found anywhere else in Tokyo.

The Colombo Food Coma
A food experience like no other, the Colombo Food Coma sounds exactly what it claims to be.

A street food tour to experience the colours, flavours and culture of Colombo, the host takes you to popular, as well as hidden, street food carts located in the heart of the city.

There will be a lot of energy along the way, hopefully, good weather, some local beer and coconut arrack for those who can handle it and even a few short tuk tuk rides.

The street food tour is combined with a mini-tour of the city itself as it runs through many of the famous archaeological sites and places of historical and cultural importance.

With a host geared to answer any questions that come his way, the night ends at one of Colombo’s oldest and most popular dessert spots.

Mulberry SugarCarb
Located amidst the hub-bub in the city of Kandy, Mulberry SugarCarb is on a mission to pour love into the very dough they knead.

With the promise of fresh local ingredients, freshly mixed sauce, handmade dough, cheese and carefully handpicked vegetables from the local market, the pizza at Mulberry is topped with a variety of local spices and herbs and the Italian recipe is baked to perfection with an authentic Sri Lankan touch.

The menu serves all palates, and leaves no one behind. Mulberry also has a signature range of dessert pizzas for those who want to substitute dessert for a main meal.

Precious leatherwood trees, which are used in the production of about 70% of the states honey, were one of the victims of the fires, so this year’s Taste features a special programme planned to raise awareness and support the local the beekeeping industry.
Festival Director Brooke Webb said, “The bees are so important in the eco-system, that without them, The Taste festival wouldn’t be here. In support of the Bees and the honey producers, the entire festival village will be transformed into a metaphoric beehive that reflects the strong, resilient and generous communities that live here in Tasmania. ”
“Community, innovation, provenance and pride of place are key themes underpinning the Festival. We wanted to take the strong sense of community that was experienced during the fires and bring it into the heart of the Festival and really showcase the enduring spirit of Tasmania.”
“The festival beehive is an eco-system and it’s exhilarating to watch it forming within the food and beverage program and seeing different producers teaming up to collaborate on their offerings and bring something truly unique and special to The Taste. More than this, the beehive eco-system is being applied to all areas of the festival,” said Webb.
Taste of Tasmania Food Curator Megan Quill said, “One of the more exciting new additions to The Taste this year is our very first providore stalls. From delicious Tasmanian truffles, tonic syrups, jams and chutneys, confectionary and of course, honey; visitors will be able to take a bit of The Taste home with them to enjoy long after the Festival finishes.”
