April is the month for Tasting the Tropics

TTNQ Chief Executive Officer Mark Olsen,
Ochre Sous Chef Mikayla Senn and
Feast of the Senses spokesperson Dave Jensen
Tourism Tropical North Queensland (TTNQ) is bringing the destination’s unique food story to life in April with the launch of Tasting the Tropics.

TTNQ Chief Executive Officer Mark Olsen said Tasting the Tropics is a celebration of Tropical North Queensland food and drink experiences highlighting the incredible chefs, producers and agritourism stories behind the region’s dining and eating culture.

“Restaurants, cafes, farms, hotels and tour operators have joined the month-long celebration by dishing up their best tropical creations and throwing in some great entertainment to complete the experience,” he said.

“Try a river dining experience, a chef’s masterclass, barrel painting with live music, local spirits and cheese, and discover that smoked green papaya is the new smoked salmon.

“We are so excited about Tasting the Tropics in April that we are kicking it off a few days early at Feast of the Senses in Innisfail, an annual festival now in its 23rd year that brings food lovers to the Cassowary Coast for a smorgasbord of exotic farm produce and tropical tastes.

“Tropical North Queensland’s unique food story has grown from a proud farming history steered by a multicultural population and finessed by creative chefs wanting a sea change.

“Ochre Restaurant owner and chef Craig Squire is among the pioneers who incorporated native Australian ingredients into modern cuisine and his team will be showcasing the Ooray plum in both food and drinks at Ochre during April.”

Ochre Sous Chef Mikayla Senn said Ooray is a versatile ingredient suitable for savoury and sweet dishes as well as drinks and was traditionally used to boost the immune system as it is rich in Vitamins C and E, potassium, zinc and antioxidants.

Tasting the Tropics
“At Ochre we infuse its unique flavour and vibrant colour into sugar syrups, stocks for sauces, wine reductions and puree for cocktails to use throughout our lunch and dinner menus,” she said.

Feast of the Senses spokesperson Dave Jensen said the four-day festival included food trails and a River Feast with rare fruit tastings, cooking demonstrations, food vans and market stalls.

“More than 150 varieties of fruit are grown in Tropical North Queensland and at Feast of the Senses you can try mangosteen and durian or stick to the traditional banana that elevated Innisfail into the Guiness Book of Records in 2017 for the world’s longest banana split stretching 8.04km along the highway,” he said.

Cairns hotels unite to conserve water supplies

Cairns Harbourside Hotel has reduced water usage in their laundry by half, saving about 3.6 million litres of water a year as part of its commitment to reducing water use and is implementing an AI program to further reduce consumption.

Tourism Tropical North Queensland (TTNQ) Chief Executive Officer Mark Olsen said the Cairns Harbourside Hotel was one of the first to volunteer to participate in the Waterwise Hotels Accord as part of the tourism industry’s commitment to reduce pressure on the region’s water supply.

“Despite our high annual rainfall, water is a precious resource in Tropical North Queensland especially this summer as Cairns Regional Council works to upgrade the city’s water storage infrastructure,” he said.

“As part of our industry’s commitment to a sustainable visitor economy, Tourism Tropical North Queensland launched the Waterwise Hotels Accord in partnership with Cairns Regional Council to ensure visitors are aware of the need to conserve water.

“Several hotels quickly jumped onboard with many introducing clever initiatives that go beyond simply asking guests to be mindful of reducing laundry requirements.

“Cairns Harbourside Hotel is an independent hotel that is achieving great outcomes in the reduction of water use thanks to the passion of their team.”

Cairns Harbourside Hotel General Manager Glen Macdonald said his team had looked closely at the hotel’s water consumption throughout the property to determine how they could improve on initiatives such as timed garden irrigation and encouraging guests to have their linen laundered every three days instead of daily.

“Our greatest success to date has been cutting the use of water in our laundry by half simply by re-setting scheduling times and reducing the duration of washing cycles, saving a minimum of 10,000 litres a day,” he said.

“We are very excited about introducing the Water Optimisation Pilot with Water Alive which uses AI to help hotels and commercial facilities to reduce their water usage by 30 per cent and look forward to seeing the results once it is underway.

“Our guests are visiting Tropical North Queensland to experience two extraordinary World Heritage areas, and they are pleased to play a role in minimising their impact on our unique environment.”

Cairns Regional Council’s Director - Cairns Infrastructure and Assets Mark Wuth applauded the water efficiency work undertaken by Cairns Harbourside Hotel as an example of what can be done to both reduce pressure on the city’s water network while also saving costs for the business.

“Everyone has a role to play in conserving our most precious resource, from individuals and families at home through to large businesses and organisations, including Council,” Mr Wuth said.

“We are grateful to hotels like Cairns Harbourside who have made significant progress on reducing their water usage and for jumping onboard the new Waterwise Hotels Accord.

“Water efficiency is important at all times but particularly during this wet season when we are managing a range of challenges with our reservoir network.

“Council encourages more hotels to join the Accord and we look forward to working with TTNQ and the tourism sector more broadly on water efficiency measures into the future.”

Email enquiries@ttnq.org.au to join the Waterwise Hotels Accord.

Do Go Chasing Waterfalls: Discover the Power of Summer in Tropical North Queensland

Barron Falls (Din Din)
Summer in the Tropics Brings the Rainforest to Life

In Tropical North Queensland, summer is a season of transformation. As warm tropical rains sweep through the region, the rainforest awakens with renewed energy, vibrant greenery, and the sound of flowing water echoing through ancient landscapes. This seasonal change offers travellers an extraordinary opportunity to witness nature at its most dynamic. For visitors seeking a refreshing escape, there is no better way to experience the tropics in summer than by exploring its spectacular waterfalls.

Why Waterfalls Are a Must-See in the Tropical Summer

Seasonal rains breathe new life into the waterways that wind through the rainforest. Streams swell, rivers surge, and waterfalls burst into powerful cascades that create breathtaking sights. The rainforest canopy becomes lush and radiant, wildlife becomes more active, and cool mist rises from the falls, offering natural relief from the summer warmth. Whether you are an adventurer, photographer, or nature enthusiast, chasing waterfalls reveals the raw beauty and rhythm of the tropical environment.

Barron Falls: A Summer Spectacle in the Rainforest

One of the most captivating waterfalls to witness during the tropical summer is Barron Falls, traditionally known as Din Din. Located in Barron Gorge National Park and framed by the elevated ranges of the Atherton Tablelands, this iconic cascade becomes a dramatic natural display when the rains arrive.

Barron Falls (Din Din)
Visitors can enjoy sweeping views from the boardwalks that lead through the forest canopy to the Barron Falls lookout. As water thunders over rugged cliffs and sends mist into the air, the scene is both powerful and serene. The journey to the falls is just as memorable, with opportunities to explore nearby rainforest trails or pair the visit with the Kuranda Scenic Railway or Skyrail Rainforest Cableway for elevated perspectives of the gorge.

A Perfect Addition to Any Summer Holiday

A visit to Barron Falls is more than a scenic outing. It is a chance to connect with the spirit of the tropics as the region undergoes its seasonal renewal. The accessibility of the falls makes it an easy inclusion on any summer itinerary, whether you are staying in Cairns, Kuranda, or exploring the Atherton Tablelands. Combined with the region’s many other natural treasures, waterfall chasing adds depth, discovery, and cool rainforest breezes to your tropical holiday.
