Did you know that Okinawa soba is quite different from the soba you find in most Japanese restaurants?

The Okinawan soba noodles are unlike the typical soba noodles made from buckwheat, and are made with a technique derived from Chinese noodle-making. 

At Ryukyumen Matsuya, you can enjoy fresh noodles served in an aged broth made of pork, chicken stock, kelp, and Nuchi-masu salt. 

Try a variety of unique soba from the flame-seared Sanmainiku soba (stewed pork belly), to the Yaeyama soba which is topped with red meat and kamaboko (fish cakes)!
