Toyama is famous for kanburi

With its marbling like no other fish and a rich umami flavour, the kanburi (winter yellowtail) melts in your mouth. Toyama is famous for kanburi, especially in the city of Himi – the peninsula is an ideal spot to catch the migrating fish in great numbers when they’re at their peak weight and flavour. 

To be designated Himi no Kanburi, it has to be caught in Toyama Bay with fixed nets, sold at auction at the harbour, and weigh over 6kg with a healthy shape.
