In a ceremony marked by celebration and pride, the space was officially unveiled by Prime Minister Anthony Albanese, NSW Premier Chris Minns, Sydney Lord Mayor Clover Moore, and Minister for Tourism Steve Kamper. Backed by Sydney Markets Limited and developed by Doltone Hospitality Group, this $20 million redevelopment project is more than just bricks and mortar—it’s a bold step into the future of food, retail, and community connection.

A Fresh Pulse for Paddy’s

Spanning 3,000 square metres, Hay St Market introduces a new energy to the already iconic Paddy’s Markets precinct. With 48 traders and 25 cuisines, the space buzzes with the aroma of global flavours and the hum of eager patrons exploring a melting pot of fresh produce, drinks, artisanal goods, and cultural stories. It’s not just a market—it’s a platform for over 300 local jobs and a new destination for Sydney’s five million annual visitors.

From Bananas to a Legacy

Among the most moving stories of the day came from Paul Signorelli OAM of Doltone Hospitality Group. In a tribute to his late father Biaggio, who began his life in Australia unloading bananas at Paddy’s Markets in 1954, Paul reflected on the emotional significance of opening Signorelli Bro’s at Hay St Market. It’s a narrative of hard work, resilience, and the enduring contributions of migrants to Sydney’s character.

Prime Minister Albanese hailed the market as a key puzzle piece in Sydney’s ongoing evolution. “Hay St Market enhances a corner of Sydney that is already home to Market City and the iconic landmark that is Paddy’s Market. It is like a missing piece of the puzzle that has finally been slotted into place. Hay St Market is revitalising this neighbourhood, giving the atmosphere and the local economy a lift.
