Midden by Mark Olive celebrates Ambassador Chef Mark Olive’s Indigenous Australian heritage with a menu focused on native Australian ingredients. Seasonal dishes include Crispy-Skin Humpty Doo Barramundi with warm kipfler potato salad, bush tomato romesco, and sea succulents, as well as Eggplant with wild spice, bunya nut, Illawarra plum sauce, and damper pangrattato.
