From caviar bars to native ingredients – The Calyx has reimagined the summer soiree

The Calyx, located in the Royal Botanic Garden Sydney, is again at the forefront of culinary and artistic innovation with the launch of new summer food and beverage offerings such as cocktails with native ingredients, a caviar bar, pretty ice, and the childhood favourite – the soft serve ice cream.

The Calyx's commitment to sustainability, nostalgia, and artistry is centre stage to the versatile event venue’s promise to tantalise taste buds and stir the senses.

Building on their ethos of climate-consciousness, The Calyx is introducing a remarkable selection of Australian native botanicals as ingredients to their cocktails.

Homegrown herbs and spices from the Royal Botanic Garden Sydney will feature in the new summer drinks selection, offering a truly unique and local identity. Guests will choose from an adaptation of a firm favourite – the Wattleseed Espresso Martini - a coffee cocktail infused with the rich, nutty flavour of native Australian wattleseed; and a zesty Finger Lime and River Mint Mojito – a sweet and refreshing mix of flavours, perfect for warm evening cocktail parties.

The Calyx will also introduce a caviar bar that promises to be the epitome of opulence.

Sara Flaksbard, General Manager of on-site culinary experts Laissez-faire Catering said: “Not only will we feature our caviar bar with papas fritas, but these little gems will also be found in our chocolate desserts and of course alongside a clean, crisp, glass of champagne.”

The next summer treat available at The Calyx will be transforming cocktails with pretty ice! Crafting ice in fun-shaped moulds, organisers can request ingredients such as edible glitter or frozen fruit - whipping up eye-catching ice that can showcase company colours and themes.

To sweeten the deal, The Calyx will reimagine the classic soft serve ice cream. This beloved frozen treat, once confined to childhood memories and beachside adventures, will be evolved into a sophisticated indulgence. Beyond the quintessential vanilla, The Calyx will tantalise with an assortment of flavours ranging from exotic fruits to unexpected savoury elements in every creamy swirl.

In addition to the food and beverage options, the team at The Calyx is bringing to life summer theming with a complete venue experience.
