Sushi train started in Osaka 65 years ago at Genroku Zushi when inventor Yoshiaki Shiraishi took inspiration from the conveyor belt being used in beer factories, and created the sushi conveyor belts we know today! 

The most difficult challenge was in developing the corners of the conveyor belt, as the plates were unable to smoothly go around them and often fell off.
