The former Soviet country of Azerbaijan is bounded by the Caspian Sea and Caucasus Mountains, which span Asia and Europe. 

Its capital, Baku, is known for its medieval walled Inner City, where is found he Palace of the Shirvanshahs, a royal retreat dating to the 15th century and the centuriesold stone Maiden Tower. 

Azerbaijani cuisine is a fusion of flavours reflecting the country’s Silk Road heritage, natural diversity and multicultural population.
