Tuna tartare with cold tomato soup, seabass sashimi with spicy pickled chilli sauce, and salmon with mango and passion fruit dressing are among the Chef’s Tapas Selection dishes. highlighting a variety of local Thai ingredients combined with Spanish flavours. My pick was the combination of salmon with mango and passionfruit washed down with a 2021 Pata Negra Verdejo (Spanish Verdelho) was taste tingling.
