Capella Sydney Launches Inaugural Chef-in-Residence Series with Federico Zanellato of Lode Pies

Capella Sydney proudly announces the launch of its first Chef-in-Residence series at Aperture, featuring the renowned Federico Zanellato of Lode Pies.

For an eight-week residency starting June 13, 2024, Federico will collaborate with Capella Sydney’s Executive Chef, Gabriele Taddeucci, to bring the Lode Pie experience to Capella Sydney’s renowned all-day dining venue, Aperture. This exclusive dining experience will be available on Monday to Friday from 5.00pm to 7.00pm, designed to cater to guests and corporate after-work clientele. Guests will have the opportunity to enjoy the Lode Pie experience while sitting beneath the mesmerising bespoke kinetic sculpture ‘Meadow’ by Amsterdam-based art duo DRIFT, amidst the stunning surrounds of Capella Sydney.

The Capella Sydney x Lode Pies menu consists of two options, including the Blackmore Wagyu Pie with mushroom and Chianti red wine jus, or a Truffle & Comté Pie served with potato dauphinoise, crispy onion, and luscious fondue. Each pie will be complemented with a side of creamy spinach and winter salad leaves, paired with a glass of Young Henry’s Sandstone Lager or a choice of house sparkling, red, or white wine for $45.00 per person.

Federico, owner of the two-hatted LuMi Dining and the acclaimed artisan pastry shop Lode Pies, is one of the most recognisable faces in the Sydney dining scene. Over the past two decades, Federico has forged a close friendship with Capella Sydney’s Executive Chef Gabriele Taddeucci through their shared Italian heritage – bringing their unique synergy to life through this culinary residency.

Lode Pies, the creation of award-winning chef Federico Zanellato (LuMi and Restaurant Leo), has gained legions of fans in Sydney since its inception in 2021. Known for their edible masterpieces that resemble works of art, Lode Pies has established a reputation for innovation and excellence in pastry. Federico’s culinary journey began in top European restaurants, including La Pergola alongside Heinz Beck and The Ritz, London. After developing a passion for Japanese food culture during his time in Japan, Federico brought his culinary vision to Australia, securing two Chef Hats at Ormeggio at The Spit during his tenure as Head Chef.
