Nodoguro, or Blackthroat Seaperch, in Japan

One of the most sought-after and prized fishes to try when you visit Japan has to be the nodoguro, or blackthroat seaperch, so called because of its black mouth.

Savour the exquisite flavours of this cherished white fish, renowned for its high-quality healthy fats and tender flesh that carries its savoury flavour no matter how it’s cooked; the most common way to enjoy nodoguro is as sashimi or grilled over special charcoal.
