Paragon 700 Boutique Hotel & Spa, Ostuni, Puglia Italy

Paragon 700 Boutique Hotel & Spa, a restored red palace in the heart of Puglia’s White City, Ostuni, opened for the first time in June 2020. 

This quintessentially Puglian property has 11 individually curated rooms and suites. This new boutique hotel will also offer creative cocktails at the hotel’s eclectic bar, indulgent treatments at the private spa and gourmet meals created by Giovanni Cerroni, the protégé of Michelin-starred chef Paulo Airaudo. 

The hotel can arrange voyages on the hotel’s private boat, wine tastings, motorcycle tours and cooking classes. Those looking to enjoy the region’s beaches can take advantage of reserved sun loungers at P-Beach, Paragon 700’s sister beach club. 

Golfers have 18 seaside holes at the San Dominica golf club, a 72 par, 6.3-kilometre course set against the backdrop of the rocky Adriatic Coast

The hotel will also play host to events throughout the year, from alfresco art classes to open-air cinema evenings. There are a number of historical sites around Ostuni including the UNESCO World Heritage Site Alberobello: the town of the trulli and Matera, the city where houses have been carved out of rocks and are still inhabited today. 

In the ancient city of Bari guests can explore a maze of streets dating back to the 11th Century. The Polignano Grottos The grottos are deep and expansive caves that run in a jagged line along the coastal cliff walls, with almost 40 grottos of in Polignano a Mare alone. The largest of these is Grotta Palazzese, which is considered a genuine 'wonder of the world'
