Years of war devasted Khmer gastronomy, so when chef duo the “Kimsan Twins” – Kimsan Pol and Kimsan Sok – opened Embassy they were determined to revive the lost flavours of Khmer cuisine. The pair spent years delving into national archives, seeking forgotten recipes and ancient methods. The chefs then opened their restaurant with an all-female staff to promote the strength and talents of Cambodian women as well as the abundance of local and seasonal ingredients for a new way to discover Cambodian gastronomy.
