Sydney’s iconic waterfront is set for a vibrant transformation as Melba’s Rooftop launches a bold Mexican takeover in partnership with premium tequila brand Don Julio. From 13 May 2026, the elevated venue above Cruise Bar & Restaurant at Circular Quay will swap its usual harbour-front atmosphere for a fully immersive Mexican-inspired dining and cocktail experience.
Timed perfectly with Vivid Sydney, this limited-season activation promises sunset views, glowing city lights and a rooftop energy unlike anything Sydney has seen before.
A Love Letter to Mexico Above Circular Quay
The concept, titled A Love Letter to Mexico, reimagines rooftop dining through the lens of Mexican culinary tradition and modern Sydney creativity. As the city transforms during Vivid, Melba’s Rooftop becomes a stage where food, music, and skyline views merge into one sensory experience.
Overlooking the shimmering waters of Sydney Harbour, guests will enjoy panoramic views of the Sydney Opera House and Harbour Bridge while immersed in a menu that celebrates authentic Mexican flavours.

Standout dishes include lightly battered cactus with avocado crema, fresh seafood ceviche featuring line-caught snapper and tiger prawns, and slow-braised pork tacos enriched with ancho chilli and pico de gallo verde. Dessert takes a playful turn with a tres leches cake infused with Don Julio and burnt citrus agave.
The result is a menu that avoids shortcuts and instead focuses on depth, balance and cultural respect.
Cocktails with Character and Craft
The rooftop bar experience is led by bartender Seine Cheung, formerly of Spice Temple and Margaret. Her cocktail list redefines what tequila-based drinks can be, moving beyond the traditional margarita into more expressive territory.
Highlights include the Sunday Peel with mandarin oleo and lime, the 3am tequila espresso martini with cold brew and cinnamon, and The Don, a spiced Old Fashioned built on Don Julio Añejo and mole bitters.
For those seeking a premium experience, a Gold Trolley service offers a special edition Don Julio 1942 paired with a caviar bump, adding a theatrical touch to the rooftop atmosphere.

The venue’s elevated position above Circular Quay ensures uninterrupted views of the festival below, making it an ideal destination for both locals and international visitors exploring the city during the winter season.
Why This Rooftop Takeover Matters
This collaboration reflects a growing trend in global hospitality: destination dining experiences that combine cultural storytelling with location-based immersion. By pairing Mexican culinary heritage with one of Australia’s most recognisable skylines, the activation offers something both familiar and unexpected.
It also reinforces Sydney’s reputation as a global food and events capital, particularly during major cultural festivals like Vivid.
Plan Your Visit to Melba’s Rooftop
With limited seasonal availability, early booking is recommended for travellers and locals hoping to experience this rooftop transformation. Whether visiting for sunset drinks, late-night dining or Vivid Sydney viewing, Melba’s Rooftop offers a standout way to experience Circular Quay after dark.
