Freshly made Mentai Baguette
Mentaiko is made from pollock roe covered in salt and spices, and spicy mentaiko is considered one of Fukuoka’s most popular staple food. 

It can be enjoyed grilled as a side dish, as a pasta sauce, or even as a pizza topping!

A more special way to eat mentaiko is pairing it with baguette, known as Mentai Baguette, said to have originated from Fukuoka.

You can find many specialty shops in this prefecture, and one of them is the YAMAYA BASE DAZAIFU, where they offer freshly made Mentai Baguette!
