In Shimane prefecture, the specialty is Matsuba-gani, a meaty and mature male snow crab caught in the waters off the coast of Shimane.
Considered a prized luxury because of its sweet and umami flavour, it is served at ryokans and hotels between November and March when fishermen are allowed to catch the crabs.
In this limited time period, you can try your hand at grilling your own crabs at Kani-goya (Crab House) and taste the freshness first hand.
