Kee’s Beckons Guests To Savour Shared Moments at 21 Carpenter

Michelin-starred chef and Kee’s Culinary Director, Andrew Walsh, debuts his latest venture— Kee’s—located within heritage boutique hotel 21 Carpenter. Honouring the building’s past as Chye Hua Seng Wee Kee remittance house, coupled with a playful nod to its location between the two Quays of Clarke Quay and Boat Quay, the street-level venue aims to bring an energetic vibrancy to the neighbourhood. The menu focuses on modern European fare alongside a thoughtfully curated array of Pan-Asian dishes, expertly complemented by a selection ofsignature cocktails and a stellar wine list.

Award-winning architectural firm WOHA spearheads the design of the 71-seater Neo-Bistro & Bar, with the intention of creating a convivial atmosphere for guests to linger for longer from day to night. The venue showcases a contemporary design reminiscent of 1930s Art Deco banking halls, retaining original building materials like upcycled wooden joists framing huge windows. Juxtaposed to the heritage timber are futurist-inspired fabrics and leather lounges, marble, and metal meshes. Leveraging lighting, mirrors, and the interplay of day and night, WOHA ensures the space effortlessly transitions through differing vibes. Establishing the vibrancy of Kee’s are tunes by DJ Aldrin, who was the resident DJ at Zouk Singapore for 17 years.

The space is thoughtfully zoned to suit every mood. An open kitchen resides on an elevated platform, drawing guests' attention to the culinary action. The central bar serves as the heart of the space, while a softly glowing wine display lends an intimate setting at night.

To add to the property’s existing art collection put together by The Artling are two large-scale paintings, commissioned from artist Khairulddin Wahab, at Kee’s. Wahab is known for his brilliant use of colour to weave narratives from cultural geography. The main art piece, Visions of Splendour, draws inspiration from Singaporean immigrants who once walked through the halls of Chye Hua Seng Wee Kee, and offers a portrayal of colonial Singapore through their eyes.

In harmony with the versatile interior, Chef Walsh has crafted a menu that caters to every moment. Small plates prime patrons’ palates, including the Marinated Green Olives (V) with fennel seed and citrus peel, as well as the Tuna Tartare featuring Vietnamese & coconut dressing. The range of cold cuts on the Charcuterie Trio—available in half- and full-size options to cater to varying appetites—includes salami, chorizo, and 36-month jamón ibérico.

Ideal for a refreshing and light dining option is the Citrus Kale Salad (V), skillfully tossed in a blend of peanut brittle, pickled ginger, and a zesty lime dressing. Chef Walsh introduces a unique twist to the traditional Caesar salad with the Japanese Baby Gem Salad, incorporating a Japanese soft-boiled egg and white anchovies. Norwegian cold-water shrimp, known for its sweetness, takes centre stage in the Shrimp Cocktail, with herb avocado and prawn cracker.

Chef Walsh transforms a meal into a communal experience of flavours through heartier mains, such as the Wanderer Ribeye Steak Frites, served with pickled red onion, watercress and chimichurri. The Sunchoke Black Pepper Pappardelle (V) features freshly-made pasta in a flavourful truffle pecorino cream sauce, topped with a slow-cooked egg. Pan-Asian dishes also invite gourmands on a shared exploration of regional cuisine. A stand out is the Japanese Red Sea Bream, served with a herbaceous green curry emulsion and coconut rice. Slow-braised for 24 hours, the fork-tender Beef Cheek Rendang is complemented with a tangy housemade snake bean achar.

Sweet finishes feature interesting re-creations, including a Pistachio Cake with pistachio crumbs and housemade Madagascar vanilla ice cream. The Chocolate Mousse has a delicate cocoa tuile and a meringue made with Singapore’s beloved dessert ingredient, pandan.

The menu’s balance of small plates and sizable mains is complemented by a truly spirited beverage program. Craft cocktails tell the history of Singapore and the two quays through the use of exotic spices and fruits, which were once sold by peddlers on Carpenter Street in the 1930s.

Highlights include the Spice & Sips, which marries Los Arcos agave spirit and the lingering heat of chilli with the tropical sweet-sour punch of passionfruit. A symphony of flavour, Citrus Tales melds Widges gin and lemon bitters weaving in the richness of spiced pear liqueur, tangy-sweet mandarin sake, and a light fizz courtesy of ginger beer. Pretty in pink, the Rosé Spritz integrates an aromatic Rosé port, underscored by hints of wild berry and fruity notes of cherry and raspberry, with Canevel prosecco and the effervescence of tonic. Meanwhile, the Calamansi Melange is an invigorating drink, showcasing the warmth of Canerock spiced rum, the zing of calamansi, and a subtle sweetness from candied winter melon.

For non-alcoholic cocktails that are equally enjoyable, imbibe in the Nourbon Tonic, featuring zero-proof Gnista barreled oak, tonic and lime. Wine seekers can also explore a non-alcoholic option: the Non 8 Torched Apple & Oolong is a sophisticated blend made from orchard apples, caraway seeds, cacao nibs, oolong, keemun and verjus, and features a crisp flavour that’s perfect to pair with creamy or spicy dishes.

Sustainable stays: Why hostel-style accommodation is better for the planet

Want to make your next trip as sustainable as possible? While you’ll have to assess everything from your food choices to mode of transport, where you choose to stay could have a bigger impact than you realise. The good news is that there’s lower impact options out there, with hostel-class accommodation leading the pack when it comes to sustainability.

Turbo-charged emissions reductions

According to research conducted by Bureau Veritas, on average hostels produce a staggering 75% less carbon emissions than hotels. From daily laundry service to landscaped gardens and brightly lit gyms kitted out with treadmills and elliptical trainers, modern hotel amenities and services tend to be very energy intensive. Then there’s the rooms themselves – typically kitted out with a mini-bar, flatscreen TV, bottled water and bathroom amenities wrapped in single-use plastics. Accommodation types based on the hostel model are much leaner operations, in that you don’t have to pay for all these extras, and neither does the planet!

Sharing is second nature

In most hotels around the world, guests generally tend to stick to themselves except for a quick conversation at the hotel bar or an awkward nod over the breakfast buffet. So what’s this got to do with sustainability? Well, in hostel-style accommodation, sharing with others is a way of life. From giving leftover packets of noodles to another guest while cooking in the communal kitchen, to gifting a paperback page-turner you just finished to the guy in the bunk next to yours, circularity is at the heart of the hostel model. Some places, (including several YHAs) take it a step further and reduce waste by having 'swap shelves', where guests can leave second-hand goods they don't need (like clothes, food and books) for others to enjoy.

Supporting local economies

Sustainability isn’t always just about the environment. Supporting the local community and economy is another element of sustainability that often gets overlooked. In comparison to private short-stay holiday rental accommodation, the hostel model contributes more to the local economy by employing people in a range of roles (like reception, cleaning, marketing, administration, and management). Many hostelling organisations also have a long track record of supporting not-for-profit organisations that do great work in the community, like YHA Sydney Harbour’s partnership with The Smith Family.

Boosting the butterfly effect

Think accommodation is just somewhere to sleep for the night? Where you choose to stay also subtly influences other choices you make while on the road. While many hotels encourage guests to book Michelin-star restaurants and upgrade to the penthouse suite, excessive consumption just isn’t what hostel-style accommodation is about. Need to get somewhere? In a hotel, you’ll likely be told to hail a taxi or referred to a private transfer service, while at somewhere built around the hostel mode, you’ll probably be recommended to hire a bike, catch a ferry, ride a bus or lace up your sneakers and walk there.

Focusing on lo-fi, accessible experiences like bushwalks, beach swims, communal dinners and kayakingin local rivers, hostel-style accommodation is naturally good at fostering more sustainable travel experiences. From promoting public transport usage to sharing a ride with a new buddy, there’s a significant flow-on effect that comes with these types of stays that you don’t get elsewhere.

Lean, green eco-machines

In comparison to large hotels owned by big, for-profit corporations, smaller hostel-style establishments are particularly good at rolling out green initiatives, as there aren’t many layers of bureaucracy to deal with (and fewer rooms and spaces to manage). If you’re hoping to have a smaller footprint when you travel in Australia, be sure to put these eco properties on your list:

In regional Victoria, Halls Gap's YHA Grampians Eco has a solar hot water system, low-energy lighting, rainwater tanks, greywater recycling and an onsite garden to pick your own herbs for dinner.

Also in Victoria, YHA Apollo Bay Eco relies on passive solar design (with thermal storage banks) to keep the space warm in winter and cool in summer without having to turn on energy-intensive air-conditioning. This eco-certified retreat also has solar hot water, low energy and timed lighting, and a compost facility for turning kitchen waste into worm food.

In Sydney, YHA Pittwater Eco's passive solar design with solar hot water means your warm showers are powered by the sun. Organic kitchen waste is composted onsite, eco cleaning products are used to keep the premises clean and rainwater tanks provide water for toilet flushing and to nourish the drought-resistant garden. Guests can even roll up their sleeves and volunteer to take part in bush regeneration activities in Ku-ring-gai National Park.

MICHELIN-listed Restaurant in Koh Samui appoints New Sous Chef

Banyan Tree Samui has announced the appointment of a new sous chef, Mr Kitja Muakin, at its signature Thai restaurant, Saffron, a move complemented by the news that the fine-dining venue has been recognised in the 2024 MICHELIN Guide for Thailand.

Kitja, known affectionately as Chef Bobby, joins the team at Saffron, after working his way through the ranks at Banyan Tree, where he began his career in Phuket in 2012 after graduating in Kitchen and Restaurant Management at Dusit Thani College in Bangkok.

He worked as commis and demi-chef at Banyan Tree Bangkok and Banyan Tree Macau, respectively, before transferring his skills to Banyan Tree Krabi for the opening of its own Saffron restaurant in 2020.

“Khun Bobby is an exceptional chef who strives to deliver intricate innovations and unique tastes to our guests,” said Director of Food & Beverage and Cuisine Rainer Roersch “He has excelled at various Banyan Tree hotels in Asia, and brings a wealth of culinary flair to the kitchen.”

Spring has sprung in Kakadu with 25% discounts being offered on accommodation and activities in Kakadu until the end of April – including the Easter break.

Under a $1 million NT Government incentive scheme, bookings through Tourism Top End (up to a total value of $5000) will attract the 25% discount. Kakadu spring activities

Yellow Water Cruises is the best way of seeing Kakadu’s epic wildlife up close and personal. Nawurlandja lookout attracts both locals and visitors during golden hour seeking the best vantage point to admire the surrounding rock formations as the escarpment starts to glow while the sun sets behind the vista. Walk up the steep 300-metre incline for sweeping views over Anbangbang Billabong and towards Arnhem Land. Not to mention, Nawurlandja is the perfect place to watch the moon rise on an evening when it’s full.

Enjoy a refreshing dip at Motor Car Falls and Boulder Creek

The entry point to the Yurmikmik Walks region gives walking enthusiasts a few options for hikes to secluded plunge pools. Sensory Soirée in Bali highlights Inspiring Indonesian Women

Inspired by International Women’s Day, Tanah Gajah, a Resort by Hadiprana is hosting ‘Bird Lounge Beats & Oriental Treats’ on March 16th. Part of their Sensory Soirée initiative, the special event is a collaboration between craft cocktail bar Moonsipper Club, Tanah Gajah, and artisan noodle shop Kedai Hou Ah, all of which are run by women. Tanah Gajah’s general manager Deasy Swandarini was born and raised on the island. Sherrine Budiman is behind the cocktail bar (and several other successful ventures in Indonesia) and lifelong friends Nydia Orlatta and Regina Nalasetya are the founders of the noodle restaurant. The sunset event will run from 5-8pm and includes oriental-inspired cocktails, noodle dishes, and culinary items from The Tempayan, along with a live jazz performance. BLUES ON BROADBEACH : NEW PROGRAM AND EXCLUSIVE HEADLINER

On Sunday 19 May, Kurrawa Park will play host to a special lineup exclusive to ticket holders, featuring New Zealand genre-bending powerhouse Fat Freddy’s Drop with their only Australian show this year, local music innovators Tijuana Cartel, and electric creatives BOOMCHILD. 

The Kurrawa Park Sunday Ticket will be on sale from 9AM AEST Wednesday 28 February for $119 + booking fee and $189 + booking fee for VIP tickets.

Aotearoa New Zealand’s seven-piece electronic-reggae-soul act Fat Freddy’s Drop are Kurrawa Park’s inaugural headliners. Their sound is a euphoric blend of dub, reggae, soul, jazz, techno, and rhythm & blues. Performing electric genre-bending live shows since their inception in 1999, Fat Freddy’s Drop are a juggernaut and regarded as one of the world’s finest live draws.
