Flavours of the Gold Coast: Discover the Exciting Dining Experiences Coming to Andaz Gold Coast

Andaz Pool Club
The Gold Coast dining scene is set for an exciting new arrival when Andaz Gold Coast opens in Broadbeach in November 2026. Marking the Australian debut of Hyatt's Andaz brand, the hotel will introduce four distinctive dining and drinking venues celebrating Queensland produce, Mediterranean flavours, open-fire cooking and the relaxed coastal lifestyle.

From morning coffee and freshly baked treats to long lunches, poolside sharing plates and sunset cocktails, Andaz Gold Coast aims to become a destination for visitors and locals seeking new culinary experiences.

Two Chefs Shaping a Distinctive Food Philosophy

Leading the culinary program is British-Australian Executive Chef Matthew Bentley, whose international career has included acclaimed restaurants in the United Kingdom, the Netherlands, London and Norway. His experience with Nordic cuisine and recent travels through Spain have helped shape his appreciation for regional ingredients, traditional cooking methods and communal dining.

At Nove, the hotel's signature restaurant, Bentley works alongside Brazilian-born Chef de Cuisine Rafael Dias. Raised in a family with Italian, Spanish and Portuguese heritage, Dias developed an early appreciation for cooking over fire and sharing meals with family.

Together, the chefs will focus on seasonal ingredients and generous hospitality, with almost 70 per cent of produce expected to come from Australian suppliers, particularly Queensland and the Northern Rivers. Partners include Miami Fish Market, Australian Bay Lobster, Bread Social Bakery, Casa Motta Italian Cheeses, Westholme Wagyu and Nimbin Valley Cheese.

Nove: Mediterranean Dining Meets Queensland Produce

Nove Restaurant
Nove will bring the flavours of Catalonia, the Basque Country, the French Riviera and Italy to Broadbeach. At the heart of the restaurant is a stone-hearth oven, complementing a menu inspired by seasonal produce, traditional techniques and dishes intended for sharing.

Among the anticipated signature dishes are Sommerlad heritage chicken slow-roasted in a clay pot before being finished over intense heat and served with mushroom and brandy sauce. Seafood lovers can look forward to koji-glazed Moreton Bay bugs paired with Spanish Bomba rice, squid ink and piquillo aioli.

For dessert, a tableside tiramisu presentation will add a theatrical touch to the dining experience.

The wine collection is expected to feature approximately 160 bottles, combining international selections from Italy, Spain and France with Queensland wines from regions including the Granite Belt and South Burnett. Producers such as Ballandean Estate, Symphony Hill and Golden Grove will introduce diners to local vineyards.

Vista Lounge: A New Broadbeach Coffee Stop

Steven, Matthew & Rafael
Vista Lounge will serve as the hotel's social hub, welcoming overnight guests and local residents from the morning onwards. The menu will reflect Australia's café culture, featuring St Ali coffee, Teadrop matcha, signature cold-foam drinks, breakfast dishes and freshly prepared bakery treats.

Specialities will include Casa Motta ricotta hotcakes with Hampson honeycomb butter, an Andaz crepe layer cake and an exclusive white chocolate and strawberry cookie created for the hotel.

As the morning moves into afternoon, Vista will transition into relaxed all-day dining, offering a convenient place to pause during a Gold Coast holiday.

Andaz Pool Club: Open-Fire Cooking and Relaxed Afternoons

The Andaz Pool Club will combine outdoor dining, cocktails and private cabanas with a menu inspired by Levantine cuisine and South American grilling traditions.

An Asado Parrilla grill will cook meats over natural wood charcoal, while a high-temperature oven will prepare flatbreads. Menu highlights are expected to include Fremantle octopus skewers with taramasalata and parsley, alongside pita topped with Casa Motta halloumi, spiced honey, tzatziki and pomegranate.

Eight private cabanas will be available for hire by hotel guests and non-guests. Live DJs are planned for Fridays and Saturdays, creating a lively atmosphere as afternoons extend towards evening.

Verde Bar: Cocktails Inspired by the Gold Coast Hinterland

Verde Bar
Verde Bar will draw inspiration from the nearby hinterland, with deep green interiors and sunset views towards the mountains. The drinks menu will feature signature creations, including a Verde Martini made with burnt butter gin, alongside an approachable selection of bar food.

Queensland beverage producers will also feature across the hotel's drinks offering, with partners including White Oat Distillery, Mount Tamborine Distillery, Burleigh Brewing Co. and BrewDog. Vinyl DJs are planned for Friday and Saturday nights.

Plan a Gold Coast Culinary Escape

Scheduled to open in November 2026, Andaz Gold Coast will offer four different ways to experience Broadbeach's evolving food and drink scene. From Mediterranean-inspired dining at Nove to coffee at Vista, poolside meals and evening cocktails at Verde, the hotel promises a varied program throughout the day.

For travellers exploring the Gold Coast, these new venues will provide another reason to discover Broadbeach, complementing its beaches, shopping, entertainment and coastal attractions.
