Ingredients
ANZAC biscuit |
- 1 cup plain flour
- 1 cup sugar
- ¾ cup coconut
- 125 grams butter
- 2 tablespoons golden syrup
- ½ teaspoon bi-carbonate soda
- 1 tablespoon boiling water
Method
- combine oats, sifted flour, sugar, coconut- combine butter & golden syrup and stir over gentle heat until melted
- mix bi-carb soda with boiling water, then add to melted butter mixture
- stir butter mixture into dry ingredients
- place spoonful of mixture on lightly greased oven trays allowing room for spreading
- cook in slow oven for 20 minutes
- loosen while warm, then cool on trays
Makes about 30-35 biscuits
