ANZAC Biscuits

With Australia Day being celebrated on 26 January, now is the perfect time to head to the kitchen and make some batches of that great Australian biscuit - the ANZAC biscuit. If this is the first time you have made them let me know how they turned out, especially if you live in another country around the world !

Ingredients

ANZAC biscuit
- 1 cup rolled oats
- 1 cup plain flour
- 1 cup sugar
- ¾ cup coconut
- 125 grams butter
- 2 tablespoons golden syrup
- ½ teaspoon bi-carbonate soda
- 1 tablespoon boiling water


Method

- combine oats, sifted flour, sugar, coconut
- combine butter & golden syrup and stir over gentle heat until melted
- mix bi-carb soda with boiling water, then add to melted butter mixture
- stir butter mixture into dry ingredients
- place spoonful of mixture on lightly greased oven trays allowing room for spreading
- cook in slow oven for 20 minutes
- loosen while warm, then cool on trays

Makes about 30-35 biscuits
