An overnight stay in Sydney can be a wonderful way to enjoy the city at a relaxed pace, particularly when the hotel provides a comfortable room, convenient transport connections and easy access to the places you want to visit.

On a recent visit to Sydney, I enjoyed an overnight stay at Rydges Australia Square, a contemporary hotel in the heart of the Sydney CBD. Formerly known as the Tank Stream Hotel, the property combines its interesting Sydney history with modern accommodation and hospitality.

For my stay, I was accommodated in a Premium King Room and enjoyed a comfortable evening, a good night's sleep and a buffet breakfast at Le Petit Flot the following morning.

A Hotel With An Interesting Sydney History

Rydges Australia Square occupies a site with an intriguing connection to Sydney's history.

The property was originally a 1960s commercial building on the corner of Pitt and Hunter Streets. The site was associated with Dymocks, which operated a bookshop there for many years, before the building was redeveloped and converted into a hotel.

Planning approval was granted for alterations to the existing building, including the addition of four new levels and its conversion into a hotel. The property subsequently opened as the Tank Stream Hotel before becoming Rydges Australia Square.

The former name referred to the Tank Stream, Sydney's historic freshwater watercourse, which played an important role in the early European settlement of Sydney.

Today, the hotel provides a contemporary accommodation experience while its location remains connected to one of the city's most fascinating pieces of history.

A Welcoming Reception And Easy Check-In

My arrival at Rydges Australia Square was straightforward.

The reception lobby has a contemporary appearance and provides a welcoming first impression. The check-in process was efficient, with the reception team assisting me with the arrival formalities and providing the information I needed for my stay.

The hotel has a 24-hour reception, which is useful for travellers arriving at different times. 

I found the arrival process uncomplicated, allowing me to settle into my room without delay.

My Premium King Room

For my overnight stay, I enjoyed a Premium King Room.

The room provided a comfortable and practical environment for relaxing after a day in Sydney. Contemporary decor, comfortable furniture and a king-size bed created an inviting space, while the room's design made good use of the available area.

The Premium King Room also features city views and soundproofing, together with complimentary Wi-Fi, individually controlled air conditioning, an espresso coffee machine, tea-making facilities, a mini refrigerator, electronic safe, iron and ironing board and hair dryer.

I particularly appreciated the combination of comfort and practicality. Everything I needed for an overnight city stay was readily available.

A Comfortable And Practical Bathroom

The bathroom was clean, modern and practical, with a large walk-in shower featuring an adjustable handheld spray.

The room's bathroom also included Thankyou bathroom products and a hair dryer, providing the everyday amenities needed for a comfortable overnight stay.

For me, the walk-in shower was particularly useful after a busy day in Sydney and added to the feeling that the room had been designed around the practical needs of travellers.

The Smart TV Was Easy To Use

One of the room features I particularly enjoyed was the Smart TV.

The television provided access to entertainment and streaming, and I was able to use it myself without any assistance.

This was especially convenient in the evening. After spending time in Sydney, I could return to my room, relax on the bed and watch movies and stream entertainment.

It may seem like a small detail, but being able to operate the television easily without having to call reception added to the convenience of the stay.

A Good Night's Sleep

A comfortable bed is essential during any hotel stay, and I found my Premium King Room provided a pleasant sleeping environment.

The king-size bed, air conditioning, soundproofing and double-glazed windows helped create a comfortable retreat from the activity of the city outside.

For an overnight visit, the room offered the right balance between comfort and functionality.

Breakfast At Le Petit Flot

The following morning, I headed to Le Petit Flot on Level 2 for breakfast.

The restaurant provides a pleasant setting for beginning the day, with a food offering influenced by French cuisine and contemporary Australian dining.

I enjoyed the buffet breakfast, which provided a selection of hot dishes, pastries, seasonal fruit, cereals, yoghurt, breads and spreads, together with hot and cold beverages.

Having breakfast within the hotel was particularly convenient. There was no need to leave the property early in the morning to find somewhere to eat.

The breakfast provided a relaxed start to the day before I headed out into Sydney.

Exploring Sydney From A Central Base

One of the most useful features of Rydges Australia Square is its position in the Sydney CBD.

The hotel is located at 97 to 99 Pitt Street, close to Wynyard Station and within convenient reach of many of Sydney's major attractions.

Pitt Street Mall is nearby for shopping, while Circular Quay provides access to the Sydney Opera House, Sydney Harbour Bridge and ferry services. Darling Harbour, Martin Place, the Queen Victoria Building and numerous restaurants, cafes and bars are also easily accessible.

The location works particularly well for visitors who enjoy walking, while public transport provides an easy way to travel further afield.

Wynyard Station is only about a five-minute walk from the hotel, providing access to Sydney's train network. Light rail, buses and ferries can also be used to explore other parts of the city.

For visitors travelling from Sydney Airport, the airport train provides a practical public transport option, while taxis and rideshare services offer door-to-door alternatives.

A Convenient Choice For Business And Leisure

Business visitors can take advantage of the proximity to Sydney's financial district, complimentary Wi-Fi and meeting facilities, while leisure travellers have shopping, restaurants, entertainment and attractions close at hand.

After breakfast, I returned to my room before preparing to leave.

Check-out was just as straightforward as check-in. The reception area provided an efficient departure point, and I was soon on my way.

For an overnight stay, I appreciated the uncomplicated arrival and departure experience. There was no unnecessary fuss, allowing me to concentrate on enjoying my time in Sydney.

My Premium King Room provided a comfortable place to relax, with contemporary decor, practical furniture, Wi-Fi, air conditioning, a well-equipped bathroom and a Smart TV that I could easily operate myself. The ability to watch movies and stream entertainment in the evening was an added convenience, while the soundproofing helped create a restful environment.

Breakfast at Le Petit Flot was another highlight, offering a convenient buffet breakfast within the hotel before beginning another day in Sydney.

What particularly worked for me was the overall simplicity of the experience. From check-in through to check-out, the hotel provided the facilities and services I needed without making the stay complicated.

One of the true highlights of my stay was the buffet breakfast served each morning in The CUT Restaurant. As someone who attends a lot of events and hotel stays, I can say with confidence that this was one of the better hotel breakfasts I've had in a long time.

The selection was outstanding—everything from fresh tropical fruits and creamy yoghurts to house-baked pastries, sourdoughs and croissants. For those who enjoy a hot breakfast (as I do), there were eggs cooked to order, grilled tomatoes, mushrooms, crispy bacon and sausages, all perfectly prepared and regularly replenished.

I especially enjoyed starting the day with a barista-made flat white and a plate of scrambled eggs, smoked salmon, and avocado on toast—fuel for a full day of meetings and networking. The setting was calm and filled with natural light, making it an easy place to linger over a second coffee and take in the city views.

Just steps away, the hotel's coffee shop provides a welcoming atmosphere to enjoy a freshly brewed espresso or a light snack, making it an ideal spot to recharge before heading out to explore the city.

A Taste of Elegance Before the Show: Dining at AMBER Restaurant, Rydges World Square

A Hidden Culinary Gem in the Heart of Sydney

Tucked inside the bustling Rydges World Square, AMBER Restaurant is a surprising slice of calm and culinary creativity right in the city centre. A short stroll from the iconic Capitol Theatre, it's the perfect place for an elegant pre-show dinner. That’s exactly what my work colleague and I experienced when we dined there ahead of a much-anticipated evening at the theatre. The restaurant offers a $69 two-course or $79 three-course option, and we opted for the full three-course experience—complete with a glass of wine.

Entrees That Set the Stage

Pumpkin Soup, Crispy Confit Duck

To begin, we shared two entrees that were both visually stunning and flavour-packed. The salt and pepper squid arrived first—lightly crisped, served with char-grilled lemon, black garlic mayo, and tender petti bouche. The squid was perfectly cooked and paired beautifully with the bold mayo and citrus.

Equally impressive was the pumpkin soup with crispy confit duck. This dish delivered comfort and complexity in one bowl. The butternut pumpkin was rich and creamy, subtly spiced and uplifted by a swirl of coconut milk. The shredded confit duck added texture and depth, while the grilled sourdough on the side was a satisfying touch. 

Mains That Steal the Spotlight

Fish of the Day

For our mains, we continued the theme of variety and shared the two standout dishes. The barramundi fish of the day was delicate and flaky, resting on a smooth celeriac puree. Accompanied by wild mushrooms, green peas, tomato concasse, and finished with a saffron beurre blanc, it was as vibrant in taste as it was in presentation. The fish dish was light yet layered, offering a delicate contrast to the rich and deeply comforting lamb shoulder.

The slow-cooked lamb shoulder was a heartier option. Fall-apart tender, it sat on a bed of nutty farro, with chamomile-infused carrot and celery adding a unique aromatic dimension. A glossy jus brought everything together beautifully.

We finished on a high note with desserts that were almost too beautiful to eat. The pistachio matcha brûlée was a creative twist on the classic. The matcha custard was smooth and earthy, contrasted by the crisp toffee topping. A pistachio ice cream and berry coulis added colour and freshness.

The dark chocolate cremeux was rich, silky, and deeply indulgent. Paired with fig jam, fresh fig slices, and a light vanilla anglaise, it was a perfectly balanced end to the meal.

The desserts were a flawless finale to an exceptional dining experience at AMBER Restaurant, leaving us perfectly poised for a memorable night at the theatre.

Schwartz Hotels Shine Brightly in NSW Accommodation Awards

Dr Jerry Schwartz had plenty of reasons to smile at the Accommodation Association of NSW Awards last week.

His Rydges Resort Hunter Valley was one of the star performers on the night. The resort was crowned Regional Superior Hotel of the Year, and also took out gold for Best Innovation Project and Workplace Health & Safety.

The awards for the Hunter Valley resort coincide with the launch of Dr Schwartz’s new solar farm in grounds adjacent to the hotel. The 5MW solar plant joins an earlier 5MW plant, meaning that the two farms are now producing enough energy to cover the output of all his hotels across NSW and still return additional energy to the grid.

Dr Schwartz said environmental and sustainability best-practice needed to be at the heart of all hotels’ operations.

“That’s why I was so happy that Rydges Resort Hunter Valley not only won the Best Superior Regional Hotel award but also the Best Innovation Project because that was all about sustainability,” said Dr Schwartz.

“Hotels have to be holistic in terms of the way they operate. Sustainability must be at the fore of every hotel operation. Most Schwartz Family Company hotels have introduced major environmental initiatives over the years, and Rydges Resort Hunter Valley really shines brightly as a sustainability leader.

“It is particularly important to showcase renewable energy in the heart of a region still known for its coal mining.

“To make the hotel, convention centre and brewery 100% renewable is a vital initiative. Dr Jerry Schwartz to launch the Hunter Valley Hospitality School, and announces plans for new bar and brewery venue in Newcastle

Leading hotelier and hospitality entrepreneur, Dr Jerry Schwartz, is teaming up with the University of Newcastle to address the hospitality skills shortage by establishing a new training academy for the Hunter Valley.

The private Hunter Hospitality School will be established in Dr Schwartz’s property in Newcastle’s Honeysuckle district and will offer courses in hospitality, IT, spa therapy and brewing.

In addition to providing job-ready graduates, the college's diploma programs provide pathways to higher education opportunities.

Dr Schwartz is seeking final accreditation for the training college. In the meantime, he is in discussions with the University of Newcastle to align the training college with the University’s new Bachelor of Tourism, Hospitality and Events course.

The Cert IV course offered by the new Hunter Hospitality School will be structured so as to allow credits for the first year of the new three-year University course.

As part of the courses, students from the college and university will be required to undertake mandatory on-the-job training.

Dr Schwartz owns three hotels in the Hunter Valley - Rydges Newcastle, Newcastle Novotel and Hunter Valley Crowne Plaza – as well as a brewery, luxury spa and other tourism interests. His operations employ over 1000 people in the region.

Dr Schwartz said that the emphasis of the courses would be on practical training, as the Hunter region and the rest of Australia were desperately short of job-ready hospitality personnel.

“Covid, the closure of borders, and many years of underfunding in the hospitality training sector have all conspired to create a serious shortage in skilled personnel for the hotel and hospitality industry,” he said.

“We are also experiencing demand in excess of 2019, as more Australians look to discover and enjoy their own country.

“The University degree and our College diplomas will place a major emphasis on developing practical skills, particularly in relation to the Hunter region. So, getting experience in the wine and craft beer sectors will be important as these are major tourism drivers for the regions, as are events.”

New brewery and bar venue for Newcastle

Dr Schwartz also announced plans for a multi-purpose bar and function venue at the new Crossing apartment and retail complex in Honeysuckle.

The venue will be complemented by an in-house brewery in Dr Schwartz’s adjoining Centenary Drive property, which will also house the hospitality training college.

Schwartz Family Company operates breweries in Lovedale and Sydney, aligned to food and beverage outlets and hotel accommodation. The Newcastle brewery is expected to be completed in 2024.
