There are hotels that simply offer a place to sleep, and then there are those that elevate your entire travel experience. My stay at Hyatt Regency Sydney firmly belongs in the latter category. Perfectly positioned beside Darling Harbour in the heart of Sydney, this premium waterfront retreat delivers comfort, convenience and a genuine sense of occasion from the moment you arrive.

As Australia’s largest premium hotel, it seamlessly blends scale with sophistication, offering a polished yet welcoming atmosphere for both leisure and business travellers.

A Room With a View to Remember

I stayed in a 1 King Bed Tower Room with Darling Harbour view, and it quickly became one of the highlights of my visit. By day, the room was bathed in natural light, with sweeping views across the harbour creating a calming, almost cinematic backdrop. By night, the scene transformed into a glittering display of city lights reflecting across the water.

The room itself was modern, spacious and thoughtfully designed, with every detail geared towards comfort. I especially appreciated the flexible general and mood lighting options, which allowed the space to shift effortlessly from bright and energising to soft and relaxing. Blackout curtains ensured a restful night’s sleep, while the large smart TV and complimentary Wi-Fi added to the overall convenience. Tea and coffee making facilities, along with plush bathrobes and slippers, enhanced the sense of comfort throughout my stay.

The separate bathroom was equally well appointed, featuring a sleek vanity, toilet and shower. Premium amenities by Pharmacopia, including body lotion, facial soap, shampoo, conditioner and body wash, added a refined finishing touch. It was the kind of space that made it tempting to linger a little longer each morning and return early in the evening just to take in the view again.

One of the standout moments of my stay was breakfast at Sailmaker Restaurant. The buffet offered an impressive spread, from cereals, fresh pastries and seasonal fruit to hearty hot dishes, all beautifully presented. I particularly enjoyed the wide selection of spreads available for toast and crumpets, though I found myself returning to the blackberry jam each morning. The mixed berry smoothie was another highlight, fresh and full of flavour.

I also appreciated the generous range of hot dishes on offer, along with the unique greenspace wall of fresh herbs, where you could select your own additions. A standout feature was the egg order system, where you complete a simple slip indicating your preferred style, hand it to the kitchen, and have your freshly cooked dish delivered directly to your table. The cappuccino was consistently well made, rounding out a breakfast experience that felt both indulgent and thoughtfully curated.

It was the perfect way to start the day, especially with the relaxed atmosphere and attentive service adding to the overall experience. Whether you are fuelling up for a day of sightseeing or easing into a slower morning, this is a breakfast that truly delivers.

M&L Hospitality and Hyatt Regency Sydney Implements Goterra Food Waste Management System

In an industry-leading move, Hyatt Regency Sydney - Australia’s largest hotel, has become the first hotel in the world to implement Goterra’s compact sustainable food waste management system onsite. Championed by owners M&L Hospitality, this initiative marks a significant step towards managing the hotel’s food waste and reducing its carbon footprint and environmental impact.

Goterra's system, created and led by CEO Olympia Yarger, employs innovative technology to manage food waste using insects. The system utilises Black Soldier Fly larvae to break down food waste onsite rapidly and at a large scale. Housed in high-tech, containerised units dubbed ‘Maggot Robots,’ the larvae can devour vast amounts of food waste, reducing it by 95% in just 24 hours. This transformational innovation will help the industry tackle climate change, aligning Hyatt Regency Sydney with global sustainability goals.

"When you manage food waste with insects, you radically reduce the impact it has on the world. Using insects in tandem with industrial robotics means we manage waste efficiently, producing a sustainable protein that can be used in agricultural supply chains, creating a truly circular system," Yarger explains.

Hyatt Regency Sydney is Australia’s largest premium hotel. Boasting 878 rooms, award-winning dining experiences and 4,000 square metres of flexible meeting and event spaces that can house up to 1,000 guests, the hotel actively manages hundreds of tonnes of food waste every year. In a huge win for bettering sustainable supply chains, the new system closes the loop with a ‘circular egg’; whereby Goterra processes the hotel’s food waste with insects and technology, then provides the hotel’s key egg supplier, Hilltops Free Range, with the insect protein as a feed mix alternative.

Chef Sven Ullrich at the Hyatt Regency Sydney

German born, Sven Ullrich discovered his passion for cooking at a young age commencing culinary career at the age of 15 when he enrolled in the School of Culinary Arts, Hamburg. Since then, his career has taken him around the world to Germany, Australia, Tokyo, Hong Kong and the U.S.

In 2000, he joined Hyatt Hotels as Chef de Cuisine at Hyatt Regency Sanctuary Cove, located on the sunny Gold Coast and now, almost two decades on, Sven returned to Australia to lead the team as Executive Chef at Hyatt Regency Sydney - Australia's largest upscale hotel. In his position, Sven oversees three full sized commercial kitchens, five food and beverage outlets, over 4,000sqm of event space and 878 guestrooms and suites, leading a culinary team of 75 exceptional and energetic professionals.

Since joining the team at Hyatt Regency Sydney, Sven has led the team to deliver some outstanding events including the birthday celebration for one of Australia's leading real estate developers, a traditional seven course banquet for 600 guests and many cultural weddings. He has also integrated the new sustainable seafood menu for Sailmaker's Seafarer Dinner, an Australian botanicals inspired high tea menu, seasonal share plates at Zephyr Sky Bar, a celebration of global flavours at Jackalberry and traditional pub fare at the historical Dundee Arms Pub.

Passionate about a thriving food industry, Sven's love for food extends well beyond the walls of Hyatt Regency Sydney, working closely with local suppliers to ensure the best and freshest ingredients are sourced for the hotel's guests. When he started his career, he would tell farmers what ingredients were needed to execute his menu, now he is guided by what is in season, building a menu that celebrates the season. Upholding Hyatt's global food philosophy 'Thoughtfully Sourced. Carefully Served.' Sven's passion for sustainably sourced produce shines through when speaking with guests about what's on the menu, where it is sourced from and why it was hand-picked to be part of the dish. Savour the Flavour of Summer with Sailmaker Restaurant's New Seasonal and Sustainable Seafood Experience

Sailmaker announces its summer edition of the Seafarer Dinner - a seasonal three-course Choice Menu with produce exclusively sourced from sustainable fisheries.

Sydney's most indulgent and sustainable seafood experience has been re-imagined at Hyatt Regency Sydney's Sailmaker Restaurant. The Seafarer Dinner is a continuation of Hyatt's philosophy of 'Food. Thoughtfully Sourced. Carefully Served', and working with sustainable suppliers is the core mission of the culinary team, led by Executive Chef Sven Ullrich.

The elevated three-course Seafarer Dinner has been created with produce exclusively sourced from sustainable fisheries that practice eco-friendly farming or offer wild caught product. With passion and dedication to exquisite flavours and innovative culinary creations, the latest menu underscores Sailmaker's commitment to environmental sustainability and provides a delectable dining experience.

“We work closely with partners and source produce from all corners of Australia and New Zealand to ensure each dish is not only delicious, but sustainable. I am passionate about working with local suppliers and farmers to hand-pick the best and freshest ingredients for each dish whilst being guided by what's in season. It's important for us to share our sustainability story and the origins of our dishes with our guests. In line with broader consumer trends, we are finding people are increasingly receptive of our 'ocean to plate' style philosophy and support of local farmers – eating seasonally and mindfully is when produce is at its very best,” said Executive Chef, Sven Ullrich.

Sailmaker's summer menu includes sustainably raised kingfish from Clean Seas – Spencer Gulf, South Australia, whilst the barramundi is from the renowned Humpty Doo farm, Northern Territory and the Murray cod is from Aquna, a premium and sustainable pond-grown Murray cod farm in the Riverina, New South Wales. The bread on Sailmaker's menu is sourced locally from PiOik Bakery where all products are handmade using organic, market-fresh seasonal ingredients and no preservatives. With the restaurant's butter being batch churned from single origin cream, creating a less processed product, sourced locally from Pepe Saya Buttery.

On arrival, guests are invited to enjoy the Mediterranean tapas table filled with breads, grilled artichoke, stuffed peppadew, smoked mozzarella, cured olives, dips and more, designed to be shared family style. As part of the Seafarer Dinner experience, guests can then choose from a selection of six entrées and six mains – with other standout dishes including Fremantle octopus, Skull Island prawns, Hawkesbury River oysters and more, accompanied by the finest Australian ingredients and paired with a carefully crafted wine list with New South Wales wine heroes at the forefront. To finish the evening, a sweets trolley will see mouth-watering desserts prepared and served table side – from classics like chocolate brownie or Basque cheesecake, to enchanting flavours like pear-rhubarb cobbler.

The Seafarer Dinner menu is available every Thursday, Friday, Saturday and Sunday evening from 6pm to 9:30pm, with guests able to indulge in the Choice Menu for $89 per person.

Whilst heavily inspired by the ocean, there are also vegetarian, vegan and meat options for those not looking for pesca dining.
