The motto of Pasta Bros is "Keep it local, cook it fresh and serve it fast!" They indeed live up to this motto in all its ways. They make all their dishes to order in their Surry Hills kitchen located at 80 Devonshire Street.

If you are up and about early they serve coffee and breakfast from 7am. They remain open till 3pm so that you can drop in for a delicious midday meal. You can either sit inside, outdoors, or take away.

I enjoyed a delicious hot cappuccino coffee (named for the colour of Capuchin friars' hooded frocks and first popularized by Venetian coffee houses as the "Kapuziner"). Pasta Bros use 100% organic Sacred Grounds coffee beans, and use a fancy cappuccino machine to heat the milk to just the right temperature to make the ideal coffee without that burnt taste. They delicately layer the hot milk and foam for a wonderful cappuccino experience.

When speaking to another person in the shop I found out that he is a regular coffee customer at Pasta Bros. He said that Pasta Bros was one of only two places in Surry Hills to find a good coffee. It is so good that he calls in two or three times each day for coffee.

For lunch they have cooked to order pasta, lasagna and meatballs. None of their meals are pre-made and just sitting around in a bain-marie. They cook your meal just for you when you place your order. They use the best and freshest locally sourced ingredients and cook them like a Chef would do.

With pasta dishes you create your own in three easy steps. First you choose your type of pasta from penne, fusilli, beef tortellini, spinach and ricotta ravioli, gnocchi or gluten-free penne. Next you choose your sauce from Virgin olive oil and roasted garlic, Napoli, Arrabbiata, Bolognese, Chicken pesto, Boscaiola, 3 cheeses or Tunabbiata. Then you can add on some extras, including fresh chilli, chilli flakes, roasted garlic, Parmesan, olives, pine nuts, basil pesto, semi-dried tomato, cherry tomato, goats cheese, tuna or chicken. It is then just a matter of enjoying your creation!

When I dropped in for lunch I chose the fusilli pasta with Bolognese sauce. It was delicious. The pasta was cooked to the right temperature for the right time straight after I ordered it - not too hard or too soggy. The different fresh ingredients in the Bolognese sauce combined well to create a flavoursome taste sensation. I can understand why this is the most popular pasta combination on the menu.

Pasta Bros was at first just a dream of Greg, a food enthusiast whom I recently had the pleasure of meeting. He is passionate about Mediterranean cuisine and loves the simplicity and honesty of Italian gastronomy. It was only after a few years of research and hard work and the consumption of a lot of pasta that his dream became a reality with the opening of the Pasta Bros shop in Surry Hills .

Greg has achieved his dream by serving fresh, cooked to order and delicious food, for little money, to a lot of people, and fast.

It is good to see Pasta Bros is a family business, with Greg's entire family involved, including his cousins, father, mother, brother. In fact, the Bolognese sauce that I had on my pasta was made from a recipe handed down by Greg's father.

Greg enjoys eating and serving the food he and his dedicated team create. His many repeat customers enjoy his delicious food and the friendly service provided at Pasta Bros. They also have a mobile food unit that visits events and festivals. They provide a catering service for functions, weddings, baptisms and other events, featuring hot “buffet-style” food accompanied by antipasto platters, salads, dessert, fruit platters and drinks.

Next time you are near Surry Hills or Central Station make sure you drop into Pasta Bros for a coffee, breakfast or lunch. You will come away being very satisfied with what you drank and ate, and the way it was served.
