Elevating Dairy Excellence
Chair of Judges Tiffany Beer lauded the dedication of Australian dairy producers, emphasizing their commitment to refining techniques and perfecting flavours.
“I congratulate our 2025 exhibitors on a fantastic Show! This year’s judging revealed some outstanding products, with many high-quality dairy products battling it out for the championship spots,” Beer said.
The results not only highlight the industry’s commitment to quality but also demonstrate how producers are taking expert feedback to heart, fine-tuning their products to create textures and taste profiles that rival the world’s best.
“As a result, Australian consumers are getting world-class local dairy products right at their doorstep – they are the real winners here!” Beer added.
The Rise of Non-Bovine Dairy
A standout trend in this year’s awards was the exceptional performance of non-bovine dairy products. Sheep, goat, and camel milk offerings soared in quality, with a remarkable 90% of entries receiving a medal. In a groundbreaking moment, a Marinated Persian Style Camel Milk Feta secured a gold medal and a coveted spot on the Perpetual Australian Cheeseboard.
“Now is the time to be curious about non-bovine products, and more specifically camel milk products,” Beer noted. “This feta is a marvellous introduction to camel milk and a must-try for adventurous food lovers.”
Bold and Balanced Flavours Shine
Another exciting development was the growth in complexity and balance of flavoured dairy desserts. While matcha, black sesame, and green tea have gained popularity in recent years, 2025 saw a rise in sophisticated and well-rounded profiles.
Beer highlighted that flavours such as Yuzu and sweet potato impressed the judges with their refinement and depth. Champion Dessert of the year was awarded to Shuddh Dairy for its Rasmalai, a traditional Indian delicacy that Beer described as “utterly exquisite.” Meanwhile, Cow & The Moon took home Champion Low/Reduced Ice Cream or Gelato with their White Chocolate Yuzu gelato, a flavor that perfectly married citrusy zest with creamy indulgence.
