Carefully served.' philosophy, Executive Chef Dane Clouston and Chef de Cuisine Tyson Gee break the boundaries of fine dining, delivering a menu that's full of flavour, designed to share and guaranteed to pique your curiosity. Inspired by the knowledge of suppliers and his culinary team, Gee shares, 'it's an incredible experience when you see how passion flows from a producer in the paddock to a chef placing the final touches on the plate…we need to see more chefs working with their suppliers, growing a deep foundation in the provenance of their ingredients'.
Staying true to this ethos, Gee says 'our menu is built on the best of the season at that moment, then we figure out how we can best utilize our tools to enhance the food…We collaborate to create, pushing chefs out of their comfort zones then harnessing their ideas'.
