“Soutatsu” Dashi Atelier

If you want to learn about Japanese food, Dashi is the best place to start. Dashi is a base soup used in a lot of Japanese dishes, which is full of so called “umami”, one of the five basic tastes. 

At “Soutatsu” Dashi Atelier you can find out all about how Dashi is made and how it influences the taste of Japanese cuisine. Usually dashi takes a lot of time and effort to prepare, which is why most people nowadays use instant dashi soup. “Kansou”, the company behind “Soutatsu”, however, uses a special technique to prepare the shaved bonito and kelp used in Dashi soup, which allows people to prepare easy, yet fresh and authentic dashi soup.
