Hotel Ravesis, one of Sydney's most iconic beachside establishments, has undergone a complete refurbishment and is poised to become the Eastern suburbs' ultimate destination this summer and beyond.
Located in the geographical heart of Australia's most famous beach, the new Hotel Ravesis offering is totally different to the Ravesis you remember. The two-storey space occupies prime real estate on the corner of Bondi's Campbell Parade and Hall Street and boasts sweeping panoramic ocean views. A talented team of hospitality professionals has brought new life to all aspects of the venue, from the balcony, restaurant and bar spaces through to the bespoke rooms and suites. The renovation pays homage to the art deco origins of the 1914 building, restoring it to its former glory using vibrant hues of white and flamingo pink and highlighting the original floor to ceiling arched doors and windows. The new look truly epitomises the relaxed sophistication of Sydney's Eastern Suburbs.
Newly appointed Head Chef Peter Streckfuss comes to Bondi from his previous positions as Executive Chef at The Lemon Tree and Sous Chef at Sydney stalwart Catalina. His seasonal, produce-focused menu is all about showcasing the high quality local produce he loves to cook with. Being by the water, the menu is bursting with seafood options. Oysters are shucked to order in-house and fish is filleted by hand each day. Peter takes a very hands-on approach with minimal intervention, allowing the produce to do the talking. Pasta is rolled fresh daily and Peter and his team prepare house-made seasonal pastes such as pear, rhubarb and quince. The menu features clean, light bar classics and draws on touches of Mediterranean influence.
Representing the ownership, Aya Larkin brings with him a knack for hospitality, commercial acumen and musical prowess. Stepping in to take the reins with new General Manager Colin Benge in December 2015, they have their team gearing up for the Summer 2016 unveiling. They felt that after 25 years it was time for a shake up and believe that the work they've done will resonate with eastern suburbs locals.
“Hotel Ravesis has a rare combination of attributes, and means a great deal to us, as it has to many Bondi locals and visitors to this beautiful part of the world. Our new look terrace, restaurant, bars and hotel rooms have come together so well, and there's more than just many great summers to come,” said Larkin.
Hotel Ravesis is currently restyling its collection of 12 boutique suites and rooms. The hotel will remain open throughout the process with all rooms due for completion by mid-2017. The luxury rooms feature views of iconic Bondi Beach and offer guests a relaxed, beachside stay. Light and bright with a vibrant colour palette, the rooms truly encapsulate the iconic location. Every detail has been thoughtfully conceived and is a nod to the iconic location. Organic bath products are by Vanessa Megan Organic Skincare, a Bondi local who began selling her wares at Bondi Markets, and furniture is sourced from Australian makers such as MCM House.
The final aspect rounding out the Hotel Ravesis offering is an entertainment program across multiple areas featuring DJs Friday through Sunday, a rolling roster of intriguing solo artists sprinkled throughout the week and a Wednesday night 8-piece super group of Sydney musicians called The Elements, made up of players from popular Aussie bands including The Whitlams, Skunkhour and the Bernard Fanning band. Hotel Ravesis has returned as the true heart of Bondi. Relaxed sophistication at its best - open seven days a week from 11am until 1am.
