InterContinental Sydney Introduces A Taste Of Local Australian Cuisine at New 117 Dining

InterContinental Sydney has announced the next instalment of its popular, A Taste of series, with the first of three themed degustation menus Wagyu Beef available for the month of May. Set in the hotel's newly-launched, 19th century restaurant, 117 Dining, the series has returned due to the popularity of last year's event.

The launch of the highly-anticipated A Taste Of menu comes following the opening of 117 Dining which offers a delicious a la carte menu to Sydneysiders and hotel guests. Spanning across two dining room spaces, the restaurant is the ideal setting for a special occasion, business lunch or intimate date night. The restaurant is accessible via a new, exclusive entrance on the corner of Bridge and Phillip Streets.

InterContinental Sydney's talented team of chefs, Tamas Pamer, Director of Culinary Services, Constantin Kautz Head Chef, and Jarrod Walsh in partnership with local New South Wales producers, have designed a series of innovative dinner menus to showcase the best of Australian ingredients for this year's A Taste Of series.

Running set months throughout the year, each of the three A Taste Of menus will comprise of five courses matched with a precisely selected wine. The menus all focus on a different culinary element, with Wagyu Beef (May 1st - 31st) followed by Black Truffle Delights (June 25th – July 25th) and lastly White Truffle Delights (November 1st – 30th). Each dish uses locally sourced, fresh produce, encouraging sustainability and seasonality.

Fresh, seasonal ingredients from some of Australia's finest producers will feature in this year's A Taste of series, including, Pepe Saya Butter and Vic's Meats.

A Taste of Wagyu Beef – May 1st – 31st
Dishes include sumptuous Miso cured Rangers Valley beef strip loin and Hickory smoked black mores brisket.

A Taste of Black Truffles – June 25th – July 25th
Dishes include a special Pepe Saya buttermilk sorbet and North Queensland Spanner Crab.

A Taste of White Truffles – November 1- 31st
Dishes include Confit smoked Byron bay pork jowl to Robata grilled tajima strip loin.
